INGREDIENTS
4 tablespoons cooking oil, divided
1 cup sliced celery
4 cups fresh asparagus pieces
1/2 cup sliced green onions
4 skinless, boneless chicken breast halves - cut into 1 inch strips
2 teaspoons grated orange peel
1 garlic clove, minced
1/2 cup water
2 tablespoons orange juice concentrate
4 teaspoons cornstarch
1/2 cup sliced almonds
Hot cooked rice

DIRECTIONS
In a large skillet or wok, heat 2 tablespoons oil. Stir-fry celery over medium-high heat for 1 minute. Add asparagus and onions; stir-fry for 3-5 minutes or until asparagus is crisp-tender. Transfer to a bowl; set aside. Add remaining oil to the skillet. Stir-fry chicken, orange peel and garlic for 3-4 minutes or until chicken juices run clear. Combine water, soy sauce, orange juice, concentrate and cornstarch; add to skillet along with reserved vegetables. Cook and stir for 3 minutes or until sauce is thickened and vegetables are heated through. Stir in almonds. Serve over rice.

I loved this recipe with a few changes. Reduced 1 cup of o.j. to 1/2 cup, used 1 lb. of asparagus, 3 small onions and 3 Tablespoons of Soy Sauce, omitted the celery and orange peel. Also was out of cornstarch so used 2 Tablespoons of flour instead. Just enough tangy sauce to cover everything. Took 45 min from start to finsh, the kids loved it too, will definately make this again!

I added about 2 tsp. of soy sauce since it wasn't mentioned in the ingredient list. My family liked it--my husband had seconds which he rarely does!

Like the previous reviewer I had to estimate how much soy sauce to use since the ingredient list doesn't mention it. Although I think the recipe has potential, I found it rather bland and feel it needs "that extra something" to give it a little more kick.

I made this dish for my BF parents and they RAVED about it. I used 6 chicken breasts and more than 2 tsp of orange rind. The recipe does not list Soy Sauce as an ingredient but it is in the directions when cooking. I just added it until it was flavorful. Definitely will make again.
