Asparagus Beef Lo Mein

"This flavorful stir-fry is easy and relatively inexpensive. It's served over ramen noodles, which is a nice change from rice we usually have. To simplify preparation, I use store-bought garlic infused olive oil instead of minced garlic and olive oil."

1 pound boneless beef sirloin steak, thinly sliced
1/4 teaspoon minced garlic
2 tablespoons olive oil
1 pound fresh asparagus, trimmed and cut into 2 1/2 inch pieces
2 1/4 cups water, divided
2 (3 ounce) packages beef ramen noodles
2/3 cup hoisin sauce

DIRECTIONS
In a large skillet or wok, stir-fry beef and garlic in oil for 5 minutes or until meat is no longer pink. Add the asparagus; stir-fry for 2 minutes or until crisp-tender.
In a small bowl, combine 1/4 cup water and 1/2 teaspoon seasoning from one ramen noodle seasoning packet; stir until dissolved. Add hoisin sauce; stir into the beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. (Discard remaining seasoning from opened packet.)
In a large saucepan, bring remaining water to a boil; add ramen noodles and contents of remaining seasoning packet. Cook for 3 minutes. Remove from the heat; cover and let stand until noodles are tender. Serve with beef mixture.

I was hesitant to try this because of the other negative reviews, but it is actually quite delicious and easy! I used a bit less hoisin sauce than was recommended, and added some of my fav stir fry veggies. I didnt bother to make the sauce, I just added hoisin and soy sauce to the stir frying process. Experiment with this one. Plain asparagus and beef stir fry is a little boring so try adding bean sprouts, snow peas, baby carrot, water chestnuts, and/or sliced mushrooms.

I used broccoli instead of the asparagus but otherwise followed the recipe to the letter. It was way too strong, the hoisin sauce was overpowering. I would only consider making this recipe again but instead of using 2/3 cup hoisin sauce I'd decrease it to about 1/4 and then add some soy sauce to the sauce mixture. The texture was great though. My 19 month old son loved the noodles so since he did enjoy it so much I'll probably try this recipe again with the variations I suggested.

There's no such thing as a bad recipe; only one that's unfinished. Here's the tweaked one I prepared tonight. Add pinch of sea salt & fresh ground pepper to meat as it cooks. Fresh asparagus were perfectly tender-crisp in about 3-4 minutes. Forget the Ramen and cook 8 oz angel hair pasta or thin spaghetti instead. The Ramen seasoning only complicates things and may be to blame for any off-flavor that others experienced rather than the Hoisin sauce. Speaking of which, use only 1/4 - 1/3 c. Hoisin sauce mixed with 1/4 c. water. The higher your tolerance level for sweetness, the more you're free to use, but if, like me, you like only subtle sweetness in your entrees, then use less. I suspect the brand of Hoisin also makes a difference in how sweet and/or salty the dish ends up. (We used Kikkoman's Hoisin and thought the flavor was perfect using only 1/4 c.). Start conservatively; you can always add more. Didn't use any soy; didn't need it. Served beef/asparagus mixture over pasta, ensuring a little sauce was evenly distributed over the pasta. Finally, I finished with a sprinkle of lightly toasted sesame seed. Georgeous and no leftovers!

This dish was so easy and quick to make and was a hit with my wife and kids! I added mushrooms and used 1/2 cup hoisin instead of 3/4. Great dish!

We were not thrilled with this recipe. We love Lo Mein, but I think it was the hoisin sauce we didn't care for in this recipe. My DH ended up dousing his with soy sauce just to finish it. We won't be trying this again...sorry.

I really enjoyed this meal. My bf who gave me looks because I was cooking asparagus (he hates it with a passion) He ended up eating most of it. I am making it agian tonight but I'm adding whole mushrooms (caned) and a waterchesnuts (caned) Try it!
