My husband brought home one of those BIG bundles of asparagus from Costco, and I was looking for a new way to use asparagus. I originally picked this recipe because it uses two of my favorite vegies - asparagus and avocado - but I couldn't find any good avocados at the grocer's (good for guacamole, but not for this), so we had it without, and I don't think we missed a thing! In fact, the avocado might have been too much of a good thing, but will try the salad with it next time. We all gave it 2-thumbs up - thanks for a new way to serve one of my favorite vegies!

We only had avacado and asparagus on hand for the vegetables, but it was delicious. Even though my boyfriend was a little scared by it ("Cold asparagus and avacado?!) He ended up really liking it. Very (surprisingly) delicious.

This was delicious--a great combination of flavours that worked so well together. I had all of the ingredients on hand as I really enjoy salads and veggies--and it only took minutes to put it together. Followed the recipe exactly and wouldn't change a thing.

Wonderful! The tastes combine beautifully. I microwaved the asparagus for 4 minutes and then ran it under cold water to stop the cooking process, and it turned out perfectly. I also skipped the mushrooms and added some chopped walnuts. Yum!

So easy and so delicious! We are trying hard to incorporate more "raw foods" recipes into our diet, and this recipe is almost raw. I blanched the asparagus lightly rather than use the microwave, and we liked the crisp texture it added. I also used two avocados. We can't eat mushrooms so eliminated those. This one is definitely on my keeper list.

This was very, very good. Aside from using green onion instead of red, and fresh thyme, I followed the recipe exactly (although I did just lightly blanch the asparagus, rather than microwaving it, so it was still nice and crisp). The dressing is deliciously tangy, and the thyme is perfect. The only thing I'd change is I'd add more avocado--but that's just personal preference.
