1 pound fresh asparagus, trimmed and cut into 1 1/2 inch pieces
8 fresh mushrooms, sliced
1 large ripe avocado, peeled and cubed
1 medium zucchini, diced
1 large tomato, seeded and chopped
1 medium red onion, sliced
2 tablespoons lemon juice
2 tablespoons olive or canola oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
Place asparagus and 2 tablespoons water in a microwave-safe dish. Cover and microwave on high for 3-6 minutes or until crisp-tender, stirring once; drain and cool.
In a large bowl, combine the asparagus, mushrooms, avocado, zucchini, tomato and onion; toss gently. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over salad and toss gently to coat. Cover and refrigerate until serving.

This recipe was tested with an 850-watt microwave.
Nutritional Analysis: One serving (1 cup) equals 122 calories, 9 g fat (1 g saturated fat), 0 cholesterol, 111 mg sodium, 11 g carbohydrate, 4 g fiber, 4 g protein. Diabetic Exchanges: 2 vegetable, 1-1/2 fat.

This was very, very good. Aside from using green onion instead of red, and fresh thyme, I followed the recipe exactly (although I did just lightly blanch the asparagus, rather than microwaving it, so it was still nice and crisp). The dressing is deliciously tangy, and the thyme is perfect. The only thing I'd change is I'd add more avocado--but that's just personal preference.

This was a big hit! I didn't have any red onion but added half a sweet red pepper and a stalk of celery and a dash of onion powder. My husband and I had it for supper with baked talapia and the next day he ate all of the leftovers when I was at work! He said it was even better the next day.

Very good way to get some of my favorite veggies in one meal. I did roast my asparagus, and sauteed all the other veggies except the avocado and tomato. Personal preference, I just don't like raw veggies. I halved the thyme in the dressing as I don't care for that spice. It was a very good combo that I will make again. Thanks for sharing!

This is SO GOOD! It complimented perfectly the Salmon Patties that I made. This is a keeper! Next time, I might try adding some type of feta or goat cheese to the mix. WONDERFUL!

This was delicious--a great combination of flavours that worked so well together. I had all of the ingredients on hand as I really enjoy salads and veggies--and it only took minutes to put it together. Followed the recipe exactly and wouldn't change a thing.

This salad has a great mix of veggies and a light, but flavorful dressing. DH even ate (2) helpings, even though he doesn't like avocado, asparagus, or raw zuchinni much. Will definitely make this one again! Thank you, for a delicious & healthy recipe!

We only had avacado and asparagus on hand for the vegetables, but it was delicious. Even though my boyfriend was a little scared by it ("Cold asparagus and avacado?!) He ended up really liking it. Very (surprisingly) delicious.
