True, it's a little unusual to combine rhubarb with meat in an entree, but my family loves this recipe! It was created by my mother in an effort to use abundant rhubarb from our farm garden. I'm sure you'll enjoy it, too! -Edie deSpain Logon, Utah

This is a homemade recipe from my dad. Whenever I make these for someone, they fall in love with it and always request I make more. It fills your home with a wonderful smell and is the best way to have cheap chops go so tender they fall right off the bone. Serve with hot sauce and mashed potatoes.

Midwestern Pork Chop Dinner

Tender carrots, potatoes, and kohlrabi, seasoned with marjoram and bathed in milk, bake into a creamy vegetable bed for pork chops nestled over the top. In place of kohlrabi, which tastes like broccoli with a peppery bite, you could substitute onions.

Sauteed pork chops are baked over a comfy nest of hashbrown potatoes and Cheddar cheese in a sour cream sauce, with some crunchy onion rings thrown in to keep things interesting. Add some green beans and you have a warm and homey one-dish meal.
