Arugula Salad with Citrus Vinaigrette

"Arugula is a delicious alternative to lettuce, and the citrus juice dressing is a delicious alternative to heavier store bought dressings. A lovely precursor to most meals, or a great stand-alone in the summer. Garnish with walnuts or sunflower seeds, if you like."

INGREDIENTS

  • 1/3 cup freshly squeezed grapefruit juice
  • 1/3 cup freshly squeezed orange juice
  • 1/3 cup extra virgin olive oil
  • salt to taste
  • 6 ounces arugula - rinsed, dried and torn
  • 1 pear, cored and sliced
  • 1 red bell pepper, thinly sliced

DIRECTIONS

  1. In a jar with a tight fitting lid, combine grapefruit juice, orange juice, olive oil, and salt. Shake vigorously.
  2. In a salad bowl, combine arugula, pear, and red pepper. Drizzle dressing over salad, and toss to coat. Serve immediately.

This was alright but the dressing was just too light. I think it would be fine with something a bit heartier.

A nice alternate from the regular salad, especially if it's the dinner club. Next time though I will use a more tart yellow grapefruit rather than the sweeter red, just to suit my own taste. I added a sprinkle of sunflower seed as well to compliment the arugula.

I just love arugula Jeanette and eat it at least three times a week. You're so right, this light citrus dressing complimented the spicey flavor of the arugula so nicely. Thanks for a great lunch!!
