My whole family really enjoyed this recipe; I even forgot to add the Italian seasoning and we still liked it; even my 15 yr old son loved it!

I substituted shallots for the leek and also added a couple cloves of crushed garlic. I also mixed the final result with a couple cups or so of hot brown rice, to stretch it out. This made enough for a crowd and was great! Especially good for artichoke lovers, but I think this recipe is flexible enough to include all kinds of vegetables. I might try asparagus next time.

I'm an artichoke lover, so I really liked this. I liked the contrast of textures between the artichokes and the orzo, and the little bit of leeks and Italian seasoning added just the right "something." I forgot the Parmesan cheese, which hubby was grateful for but I would have really liked, and it was still quite good even without it. I didn't see the reason for the water, so I chose to use all chicken broth. All and all, a tasty and pretty side dish.
