2 (3 ounce) packages apricot flavored gelatin mix
2 cups boiling water
1 (8 ounce) package cream cheese, softened
1 cup milk
1 (20 ounce) can crushed pineapple, undrained
4 ounces frozen whipped topping, thawed

DIRECTIONS
Dissolve gelatin in boiling water and set aside. In a mixing bowl, beat cream cheese until smooth. Gradually beat in milk until smooth. Stir in gelatin. Add pineapple and mix well. Chill. When mixture begins to thicken, fold in whipped topping. Pour into a 2-1/2-qt. serving bowl. Chill for at least 2 hours.

I used sugar free strawberry jello and added mini-marshmallows it was great!! Really enjoyed this recipe.

Excellent flavor. Used peach jello instead of apricot. Next time I'll try it with a graham cracker crust. The appearance is kind of lumpy due to the pineapple, and might not work with someone who only eats food that looks great.

The taste was excellent -- hit at the family meal! I did add one extras box of gelatin and water to give it some extra firmness, and off-bradn gelatin turned a little pink!
