Very good, especially the leftovers which make an excellent stir fry starter. Add red pepper flakes & soy sauce to apricot sauce and add to stir fried onions, bell peppers, etc. Cut meat into bite size pieces and add to other ingredients. Serve with rice. This recipe is going into my "camper recipe file".

I loved this dish! It's such a simple recipe, yet it's delicious :) I served it with mashed potatoes and green-beans...both meshed well with the pork. I would only make one recommendation...pour half of the apricot mixture in while the pork is cooking and then after you take the pork out, pour the rest in the pan, mix with cornstarch and water, and pour on top (gives you more apricot gravy).

Full-marks for the apricots pairing with meat, but the pork definitely needs some seasoning. Ended up with some dry, rubbery chops made edible by the hot apricot topping. Served it with a curried couscous. The sauce was great with that also. May grill chicken instead next attempt. Not a bad idea, though. Just gotta find a way to better prepare the pork chop.
