DIRECTIONS
Place apricots in a food processor or blender; cover and process until coarsely chopped. In a large skillet, brown pork chops in butter over medium-high heat. Add apricots. Bring to a boil. Reduce heat; cover and simmer for 7-10 minutes or until meat juices run clear.
Remove the chops and keep warm. Combine cornstarch and cold water until smooth; stir into apricot mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Season with salt and pepper. Serve over pork chops.

Full-marks for the apricots pairing with meat, but the pork definitely needs some seasoning. Ended up with some dry, rubbery chops made edible by the hot apricot topping. Served it with a curried couscous. The sauce was great with that also. May grill chicken instead next attempt. Not a bad idea, though. Just gotta find a way to better prepare the pork chop.

I loved this dish! It's such a simple recipe, yet it's delicious :) I served it with mashed potatoes and green-beans...both meshed well with the pork. I would only make one recommendation...pour half of the apricot mixture in while the pork is cooking and then after you take the pork out, pour the rest in the pan, mix with cornstarch and water, and pour on top (gives you more apricot gravy).
