Very good! I added more lemon juice than it called for, but other than that followed the recipe exactly. We had had pasta the night before, so instead of the fettucini, I made mashed potatoes and served the pork and apricot sauce over the potatoes - a very good combination. My husband asked me to keep this one.

HEATHLY and KID-FRIENDLY and QUICK recipe. Really good for a middle over the week fast recipe. I made the sauce for this and reduced it down to 1/3 and added pre-cooked pork I had left over from a previous meal. I let the pork sit for about 5 minutes in the sauce and served it over bow-tie pasta. My kids loved it! My usually very picky 3-year old loved the sauce and the pasta, but he doesn't like meat. My 5-year old ate it all and they both asked me to make again which have never happened. I served this with steamed broccoli and it went well. My husband thought some green onions would be a nice addition, but I know my kids wouldn't eat it with onions.

Great recipe and quick to make. I added a tblsp of vinegar and a couple of stems of thyme, then shredded the meat and served it in flour tortilla as a taco along with some spicy green sauce.. mmmm. delicious!

This wasnt too bad of a recipe. It was very quick to create. The only thing I would change would be to use two packages of fettuccini; there was a lot more meat/sauce then noodles.
