Apricot-Glazed Cornish Hens
SUBMITTED BY:
Randi Ison
"I found this easy recipe for Cornish hens and prepare it often for my family. The glaze keeps the hens tender and moist, and the skin roasts to a golden glow. It's tasty, too. When the children are gone for the weekend, my husband and I enjoy this meal-perfect for two."

DIRECTIONS
Combine the salt and cayenne. Rub a third of the mixture inside hens. Brush 1 tablespoon butter over hens; sprinkle with remaining seasoning mixture. Place on a rack in a shallow baking pan. Bake, uncovered, at 350 degrees F for 30 minutes.
Meanwhile, in a saucepan, combine the preserves, honey, onion, nutmeg and remaining butter. Cook and stir until preserves are melted. Brush over hens. Bake 35-40 minutes longer or until golden brown and a meat thermometer reads 180 degrees F. Cover and let stand for 5-10 minutes before serving.

This hen recipe is absolutely delicious! No over-bearing sweetness, and the meat stays very moist. I stuffed the hens with a wild rice dressing with dried cranberries and it came out wonderfully!

This recipe yields an absolutely delicious bird! The glaze is wonderful and it makes all of the meat sweet and tasty. Plus, the chicken turns out incredibly juicy. My husband and I are already planning on serving this to company.

Absolutely Deeee-Licious! Made four of them for a casual post Thanksgiving dinner with my parents and girlfriend. Really good with a regular stuffing mixed with a little rice.

Loved, loved this recipe!! I am partial to cornish game hens because, when I was little, my Mom would make this and I would really feel special, that we were eating something so "elegant". This recipe is great! My son especially loved this!! I did not change a thing with the recipe. Will definately make again....to make my family feel special!

They were of, I don't think I will cook with cornish hens again. It was kind of gamey tasting. I do a pork loin with apricot glaze and its a hit though.
