I love this recipe. Not too much sugar or fat. I use a combination of wheat flour, oat flour and flax seed instead of all white flour, and I use real eggs instead of substitutes. If you're looking for a really sweet carrot bread, this isn't for you, but I like it for what it is.

really terrific. I used a real egg and a bit more applesauce than the recipe calls for and it turned out fantastic.
