Apricot Barley Casserole

2/3 cup pine nuts or slivered almonds
1/4 cup butter, divided
2 cups pearl barley
1 cup sliced green onions
7 cups chicken broth
2/3 cup diced dried apricots
1/2 cup golden raisins

DIRECTIONS
In a large skillet, saute nuts in 2 tablespoons butter until lightly browned; remove and set aside. In the same skillet, saute the barley and onions in remaining butter until onions are tender. Add broth; bring to a boil. Stir in the apricots, raisins and reserved nuts.
Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 325 degrees F for 1-1/4 hours or until barley is tender.

I didn't have a 13 x 9 pan handy when I made this, so I used a 2.5 qt extra casserole instead. Could not fit all the liquid into the casserole, so I started with 4 c. of broth, and then added more through the cooking time, to a total of 6 cups. There was still some liquid in the casserole when I pulled it out at the end of the cooking time, but almost all of it absorbed into the barley as it stood, covered, waiting for the rest of dinner to be ready (probably about 15 - 20 min). More liquid might be cooked off in the shallower pan, but I'd think there'd be even more trouble fitting everything in. We served this alongside the Vegan Moroccan Couscous recipe from allrecipes, and everyone really liked it. I think this would also make a good side dish alongside a roast chicken or turkey, maybe in place of stuffing. We'll definitely be having this again.

This sounded good but it wasn't. The apricots gave it a bitter taste. I added a little brown sugar but would not make again.

This is a recipe that I have taken to many a pot luck. I love this recipe because it is something different and goes well with chicken, turkey or beef. The recipe does make a lot but that just means more for lunches or more for my guests to take home. It reheats beautifully. Today I used regular onion, fresh mushrooms & garlic instead of the raisons & apricots. Both ways are very good. A nutritious, super easy recipe to make!
