Applesauce Drop Doughnuts

INGREDIENTS

  • 3 tablespoons butter or margarine, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 cup applesauce
  • 1 teaspoon vanilla extract
  • 4 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup milk
  • Oil for deep-fat frying
  • Additional sugar

DIRECTIONS

  1. In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine flour, baking powder, salt, cinnamon and nutmeg; add to the creamed mixture alternately with milk (the batter will be thick). In an electric skillet or deep-fat fryer, heat oil to 375 degrees F. Drop teaspoonfuls of batter a few at a time into hot oil. Turn with a slotted spoon and fry until golden, about 1 minute on each side. Drain on paper towels; roll in sugar while warm.

These doughnuts were easy to make and tasted great. I made them for New Year's, but there were still a couple left over in the morning and they tasted great cold too. Everybody loved them, they were light and filled with taste.

So easy and so tasty. I halved the recipe cause it makes a ton. Nice and crispy outside, soft and subtly spiced inside. I rolled mine in powdered sugar in a plastic baggie. Batter is like brownie batter, so plop Tbsp in oil and fry a minute or so on each side. Definitely a keeper. Next time I will try adding chopped apple pieces. Yum!

These are delicious! I divided the recipe to make 20. I threw these together very quickly when my Dad came to visit yesterday... he loved them and my husband and son loved them also... I added extra nutmeg and mace! Not too sweet
