Added chopped walnuts to this recipe. I think I would have missed them without. I also cooked the squash in the microwave for three minutes before filling and baking. I'm glad I did because if I hadn't the squash wouldn't have cooked before the filling started to burn. I think this recipe was intended as a side dish, but it's too sweet for a side for my taste. Very yummy desert, though. My husband didn't think he was going to like it, but he gobbled it up and there was nothing left, he said it was "sooooo good."

This was delicious! Who would have thought that you could have a vegetable for dessert?? The only thing I would change would be to drizzle some honey over the top right before serving, that way the other rims of the squash get a little sweetness too. Very good, and very simple.

added walnuts, next time might try adding a bit of butter before the apple/walnut mixture so the acorn squash gets a bit more flavor

I thought this dish was pretty good. The apple filling inside was really wonderful and delicious and not at all hard to make. It has some sugar but I think this recipe is pretty healthy, but feels very decadent. My one issue was with the squash itself. I think my squash was a carnival squash and not an acorn. I don't know how different they are, but I baked mine in the oven over the suggested time of 45-55 minutes. My oven usually runs pretty hot and yet after 60 minutes the squash still wasn't really soft. It was a still bit tough and didn't have much flavor. I will consider re-making with the proper squash to see if there is a difference.

I was trying to find a way to use up squash that I had already cooked so I reversed the recipes and made squash stuffed apples. It was one of the best things I have made in a long time. I pureed the squash with the spices and sprinkled the apple halves with brown sugur. The apple halves made prefect serving portions. The spices and sugar could be adjusted to make this into a dessert. I think next time..and there will be many next times...I will put walnuts on top.

I made this last night and it was fantastic! Simple and so yummy. I did add a tiny bit of ground cloves (because I love them :) ). Great fall recipe!

This was so yummy and easy. It was even great leftover. Next time I think I will add some nuts for a little extra texture.
