I made some of the changes the other reviewers recommended including shredding one apple and dicing one, adding cinnamon and nutmeg to the batter a couple shakes of each, and doubling the topping and putting it in the middle of each muffin. It took them about 25 minutes to get done. YUM, YUM, YUM!

Well...many of the reviews were right about one thing, they were Very dense. I guess because there is no oil in the recipe? I grated a cup of apples and chopped the other half cup and that's the only changes I made so I know it wasn't anything I did differently. Anyway, the smell of them cooking was amazing and the topping was awesome but they were way too chewy and hard to bite through in my opinion. I got some compliments on them but I noticed that everyone was drinking a lot of juice while eating these muffins! LOL

I followed some of the top reviews and made the muffins as follows: 1. In a medium bowl, add 1 large Honeycrisp apple, cored, pared & chopped. Toss with 1/2 c. white sugar. 2. In another medium bowl, mix flour, baking powder, baking soda, salt and 1 t. cinnamon. 3. In a large bowl, beat together butter, 1/2 c. brown sugar and eggs until smooth. Mix in 1 t. vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon into a greased 12 c. muffin pan. 4. In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs, adding more flour if necessary. Sprinkle over muffin tops. 5. Bake 20 mins. in preheated 375 degree oven.... My kids really liked these muffins. I thought they were...well, 4 star.

These muffins are a big hit in our home. My mother in law asks me to make these whenever she visits and my sis in law has had these sent to them. They come out perfect every time and I have always followed the recipe except substituting oil for the butter sometimes.

These muffins were absolutely DELICIOUS! I made them the other day and the family absolutely loved them!!! I will be making these again! Oh, and the only change was that I used half brown sugar and half white sugar like the other members suggested. Thank you for this recipe :)

Absolutely FABULOUS! I omitted the egg (we have food allergies in the family) and did all the other recommendations and this was fantastic. Thanks for a great recipe. This one is a keeper!

Fantastic! These are moist and delicious. I read previous reviews and used 1/2 brown, 1/2 white sugar in the batter, also doubled the apples; half grated; half chunks (about 4 med-small to make up 3 cups)--next time I might triple the apples. I added 1 1/2 tsp. of vanilla because I love vanilla. Also, definitely add 1 tsp. cinnamon to the studel topping, if you like spice. I used a combo of apples--spry, mac, and wealthy--make sure to use a tangy apple like mac or granny smith in your mix to get a little extra tang. Yummy!

Super YUM!! I did tinker with the recipe by adding half white sugar and half brown, I also added raisins soaked in the vanilla and a little bit of orange juice. They were fantastic and beautiful. They are very dense not a typical muffin but very tasty and delicious all the same! Great recipe!

This is a terrific recipe. I made some of the changes suggested by others - used 2 cups of apples, 1/2 white sugar, 1/2 brown sugar, added cinnamon and nutmeg. I also added walnuts for some crunch. The spices add the most wonderful flavoring. I will definitely make these again.

I was hungry for a good apple muffin. It's fall in Minnesota and we have plenty of apples. These hit the spot with TUNISIANSWIFE's changes. (1/2 brown sugar, 1/2 white sugar, 1 tsp cinnamon, 1/2 tsp. nutmeg) I used 1 1/2 cups shredded apple AND 1 1/2 cups chopped apple. I was worried that they would be too wet, but they were just perfectly moist. I also added a little dry oatmeal to the struesel topping and melted the butter to make the topping easier to mix up. I will definitely add nuts next time I make these. They could use a little crunch. Walnuts or pecans would be good. Will definitely make again. I brought into work on a platter arranged with an apple slice between each muffin. Everyone raved.

Keeper! I find so many muffin recipes to be drier than I like, and it's so disappointing. This was moist and delicious. I used almost 2 cups of apple, and I used 3/4 cup of apple pulp in place of half of the butter (so I used 1/2 a stick of butter and 3/4 cup apple pulp). I also used 1/2 cup white sugar and 1/2 cup brown sugar (actually the half real and half splenda kind). I baked mine in the BIG muffin tins, so I only got 6. I baked them 30 minutes. I am going to alter this recipe some and try it with blueberries. If I could get a great, moist blueberry muffin recipe, I'd be so happy!

Absolutely love these. I didn't change a thing and they were perfect. I love the way the topping caramelizes and becomes kinda crunchy. They come out very rustic looking and inviting. I can't imagine anyone being disappointed it they made these.

The batter was so thick!!! It was almost like cookie batter! The muffins tasted WAY too dense. I kept checking the recipe to see what I did wrong -- I didn't do anything wrong! Just a horrible recipe!

I followed the directions exactly and these were great! Next time might add the cinnamon and some nutmeg to he dry ingrediants just to taste the difference but other then that would definately make these again! :)
