Great muffin recipe! I doubled the recipe and used 1/2 the amount of butter and 1/2 applesauce. I also doubled the crumb topping (a must!). I also substituted Splenda for the white sugar in the muffins Thanks to the reviewer who said to use grated apples as well as chopped as this way produces a really moist muffin. Took these to my daughter's basketball tournament and they went fast!

Very easy and yummy!They stay nice and moist too. The only problem I had was they overflowed my muffin pan. It makes 12 so I don't know what I did wrong. Next time I will hold out some batter to put in my smaller pan too.

unbelievably delicious! This has to be one of my favorite apple muffin recipies by far but next time I have to double it because the were gone before they were even completely cooled. Hands down a 5 star recipe.

Moist! Beautiful to the eye and taste buds. Tweaked recipe based on some prior advice (See below) THANKS! Batter:: Double apples (half shredded, half chopped), add 1 tsp of cinnamon to dough, do 1/2 white 1/2 brown sugar. Use 1/2 sugar from batter on apples to make them weep prior to adding to batter. Batter will be THICK! Streudel topping:: Triple it! Partially melt butter before mixing it in to prevent "sinkers" Add topping to CENTER of muffin and TOP. Paper cups work. Fill level with top

These were tasty, though I may keep looking for the 'ultimate' apple muffins. I make fresh muffins and such for my husbands crew each week and had some gorgeous Okanagan apples to use. I did 1 1/2 shredded, 1 1/2 chopped, cut the sugar to 1/2 cup (plenty sweet!), and sub'd apple sauce for the oil. Without the doubled apples I think they may have been too dry? I added some quick oats to the topping. Nice warm with butter :)

These were absolutely wonderful! I followed another reviewer's suggestions and shredded a cup of apples. I still used a half a cup of chopped apples, and it was the perfect amount of both. The shredded apples gave it great texture and made it so moist you could drown in it. I also added 1 tsp cinnamon and 1/2 tsp nutmeg for a bit more flavor. My boyfriend couldn't stop raving. Thanks for the great recipe!!!

Muffin Heaven!! I love this recipe because of its simplicity and "dump and stir" method. Just used a wooden spoon and some elbow grease. Don't overmix or your muffins will be tough and chewy. I used half brown, half white sugar and added some cinnamon and nutmeg to the batter. Since cranberries are fresh in the store right now I am looking for excuses to use them! I added about 1/2 cup fresh cranberries but left them whole. When you chop them up for muffins they color everything pinkish. To reduce some of the fat I used half the amount of butter called for in the recipe and substituted unsweetened apple sauce to make up the rest. Another reviewer suggested grating one apple and chopping the other so I did that with my Granny Smiths. Baked for about 25 minutes at 375 and the result was amazing! Light, fluffy and not overly sweet. The cranberries added a nice fresh zip while the apples were perfect..not too wet inside like with some other apple muffin recipes. Thank-you for sharing this recipe!!

I can't say how good they were because I made a batch and my guests ate them all up. My husband said they were were really good, so I'll definitely be making these again.

I made some of the changes the other reviewers recommended including shredding one apple and dicing one, adding cinnamon and nutmeg to the batter a couple shakes of each, and doubling the topping and putting it in the middle of each muffin. It took them about 25 minutes to get done. YUM, YUM, YUM!

Well...many of the reviews were right about one thing, they were Very dense. I guess because there is no oil in the recipe? I grated a cup of apples and chopped the other half cup and that's the only changes I made so I know it wasn't anything I did differently. Anyway, the smell of them cooking was amazing and the topping was awesome but they were way too chewy and hard to bite through in my opinion. I got some compliments on them but I noticed that everyone was drinking a lot of juice while eating these muffins! LOL

I followed some of the top reviews and made the muffins as follows: 1. In a medium bowl, add 1 large Honeycrisp apple, cored, pared & chopped. Toss with 1/2 c. white sugar. 2. In another medium bowl, mix flour, baking powder, baking soda, salt and 1 t. cinnamon. 3. In a large bowl, beat together butter, 1/2 c. brown sugar and eggs until smooth. Mix in 1 t. vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon into a greased 12 c. muffin pan. 4. In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs, adding more flour if necessary. Sprinkle over muffin tops. 5. Bake 20 mins. in preheated 375 degree oven.... My kids really liked these muffins. I thought they were...well, 4 star.

These muffins are a big hit in our home. My mother in law asks me to make these whenever she visits and my sis in law has had these sent to them. They come out perfect every time and I have always followed the recipe except substituting oil for the butter sometimes.

These muffins were absolutely DELICIOUS! I made them the other day and the family absolutely loved them!!! I will be making these again! Oh, and the only change was that I used half brown sugar and half white sugar like the other members suggested. Thank you for this recipe :)

Fantastic! These are moist and delicious. I read previous reviews and used 1/2 brown, 1/2 white sugar in the batter, also doubled the apples; half grated; half chunks (about 4 med-small to make up 3 cups)--next time I might triple the apples. I added 1 1/2 tsp. of vanilla because I love vanilla. Also, definitely add 1 tsp. cinnamon to the studel topping, if you like spice. I used a combo of apples--spry, mac, and wealthy--make sure to use a tangy apple like mac or granny smith in your mix to get a little extra tang. Yummy!
