5 stars with changes. I doubled the amount of apples. I used 3 Gala apples and shredded 1.5 and chopped 1.5 apples. I used 1/2 cup white and 1/2 cup brown sugar. I softened the butter a little. Excellent.

These muffins are superb on their own, but I've tweaked the recipe a bit. For a little extra nutrients, I substitute 1/2 cup of the white flour for 1/2 cup of whole wheat flour, and then I also about a 1/4 cup of ground Linseed, Sunflower and Almond. To counteract the dryness of the batter, I then add a splash of milk until the consistency is right for muffins. They turn out so nice that way.

Wonderful recipe - thanks so much! I increased the apples to 2 1/2 cups and added a little cinnamon with the flour mixture. Mmmm!

I made an account just to compliment this recipe. It's simple, and easy to make. I've never had a batch of these muffins not turn out. When I make these muffins, they never last long lol - people LOVE THEM! The only thing I do different is add walnuts and 2 cups of apples instead of just 1 1/2.

well I added milk and 1/2 cup of apple/mango sauce they are cooking right now, they look good. Probably should learn to read reviews though cause Im pretty sure they should have had some cinnamon in them! Oh well, hope the kids like them! BTW ran out of muffin paper so made a loaf with more than half of it...let ya know!

This recipe is delicious. Just the right amount of sweet and apple! It is refreshing to eat an apple muffin that is not overpowered by the tste of cinnamon too. I did not change anything.

I liked it, but it was extremely think, similar to cookie dough. I added about 1/2 Cup of milk, and also added 2 tsp. of cinnamon to the batter. They turned out fine. I really think the flour needs to be reduced, or just add milk. They were nice big muffins. I might leave off the topping next time, and just sprinkle lightly with cinnamon sugar. Will make these again.

I have made this recipe so many times and I have now adjusted it for myself. I also add 11/2 cups of shredded apples. Always add cinnamon to the batter, brown sugar rather than white and whole wheat flour rather than white. These are really good muffins!

I made these (with the suggestions from the reviews) and they were great! I had some trouble getting the topping right (my fault), but what I ended up with was great! Made 12 smaller muffins.
