Apple Streusel Muffins

"One day when I didn't have apples for my favorite dessert recipe, I used applesauce instead. I also put the batter in muffin cups so the men working cattle at our place could easily eat these treats in the field. --Beverly Medalen, Willow City, North Dakota"

INGREDIENTS

  • 1 (18.25 ounce) package yellow cake mix
  • 3/4 cup all-purpose flour
  • 3 eggs
  • 3/4 cup water
  • 1/3 cup vegetable oil
  • FILLING:
  • 3/4 cup applesauce
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • STREUSEL TOPPING:
  • 1/4 cup sugar
  • 1 teaspoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon butter or margarine, softened

DIRECTIONS

  1. In a mixing bowl, combine cake mix, flour, eggs, water and oil. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fill paper-lined muffin cups one-third full. Combine the filling ingredients; place 2 tablespoonfuls in the center of each muffin cup. Top with remaining batter. Combine the topping ingredients until crumbly; sprinkle over batter.
  2. Bake at 350 degrees F for 18-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

This recipe is very easy to make using the cake mix and applesauce. I needed to double the amount of filling and topping for the amount of batter. They are more like a cake then a muffin, lighter, not as dense. I used a french vanilla cake mix, since that is all I had. Good recipe, but could have a little more flavor throughout the whole muffin.

These muffins are delicious! And the applesauce makes the recipe super easy. Definitely recommend these.

I am always looking for new snacks for my daycare kids. I made these muffins in my mini muffin pan with a white cake mix (all I had) and topped them with a cinnamon glaze - powdered sugar, cinnamon and a little milk. The kids ate them up! - my 2nd grader said they tastes like mini cinnamon rolls. I thought the batter was a little thick so might thin it out next time and use milk instead of the water Thanks for a new snack idea!
