I also doubled the batch. Put 2 1/4 cup diced apples and only used 3/4 cup sugars. I didn't want walnuts so I chopped up some peanuts which turned out to be a good addition.

SO yummy! A great way to use up extra apples from apple-picking. Had to add couple tablespoons of apple juice to be able to mix the flour into the sugar/egg mix, and it is a bit tricky getting the bake time right (all those reviewers said DO NOT OVERBAKE! so I was a little scared, esp living in a high altitude area) - I would say go with 30 minutes. Thanks for the recipe!

Double the apple and sprinkle a mixture of white and brown sugar on the top would be excellent.

I made this for my volleyball team pasta dinner and the girls gobbled it up. Like many suggested, I doubled the recipe without doubling the topping and made it in a 9x13. I quadrupled the apples (but left out the nuts) so I had to up the cooking time a little, but it came out perfectly and I will definitely make it again!

This took no effort and turned out amazing! I added a little extra cinnamon to both the batter and the topping as well as a pinch of pumpkin pie spice as well as a touch of almond extract as someone else had suggested - it was delicious! I also decided to make it in a 10" pie dish so I could serve slices which worked wonderfully! It goes amazing with some fresh vanilla ice cream!

These are very easy to under/over cook, but they are still excellent. I brought them to work and everyone loved them! It is hard to keep them in a "bar" shape, but they were delicious nevertheless!

Very good! I was looking for a quick, "fallish" afternoon snack to make today, and this fit the bill perfectly! I followed BarbiAnn's directions exactly, except for omitting the walnuts (I only had pecans on hand and didn't feel they would be a good substitute) and using about 3/4 cups worth of GrannySmith apple (my large apple was well over a 1/2 cup's worth; I realized that half of it would suffice, but decided to add a tad more - and then eat the rest!). I used my 9 inch Pampered Chef stoneware baking dish for this and baked for a total of 27.5 minutes. I still think I could have baked longer, but the top was VERY brown so I decided not to.... My only suggestions (for next time!) are to double the recipe (not the topping tho) and cover with foil to prevent excessive browning. I think with these changes, my bars would turn out even better! As is, they are just too thin (IMHO) and don't hold up well once cut (they crumble easily), but that's a minor complaint that can easily be corrected by doubling the batter. Thanks for sharing your idea, Barbi :)

Well, these have been out of the oven for an hour and are almost gone! Everyone liked them. Chewy little apple treats. I decreased the sugar by 1/4 of a cup, and increased the apples by a 1/2 cup. Perfect for this time of year.

tastes great! I did as other reviewers suggested - increased apple and decreased sugars. For the topping, I also cut the cinnamon in half. I also added about 1 T. of brown sugar. It made a great topping!

I liked these a lot. The only changes I made were using whole wheat flour and using 1 whole cut up apple. Easy and much healthier than most other desserts I make :)

I doubled the recipe and used a 9" by 13" baking pan which also took longer to bake as well. I added 2 1/4 cups on apples and a 1/2 apple cinn. sauce.

Delicious! I may try to reduce the sugars a bit next time, but overall, the recipe is excellent as is. These taste great warm with a scoop of cinnamon ice cream.

Very nice. It does taste like a gooey coffee cake, as one reviewer mentioned. I doubled the recipe and made it in the 9x9 pan, although I heeded other reviewer's comments about the topping and kept that to the regular amount. Very crunchy on top and gooey, but not liquidy, and it makes for a very nice snack. I did bake longer--about 2x as long bc I doubled it, and it worked just fine. I put Apple Tapioca over squares for dessert tonight and felt it was lovely. Thanks for the recipe!
