This dish was actually pretty good. I took it to work for a breakfast meeting. Everyone had a second helping. I doubled the recipe, and I also used shredded hashbrowns instead of bread. Make sure you cut the apple up fairly small! I cut them really small using a hand chopper, and they turned out great.

This was a big hit! A delicious "lighter" alternative to all the sugar-laden, fat-soaked special breakfast dishes and so easy to prepare, especially the morning part. I did use the regular sausage as my grocery didn't have the maple flavor, and I substituted non-fat plain yogurt for the sour cream. You'll definitely want to chop the sausage and apple in smaller pieces. This will now be my standard "overnight guest breakfast"

This was pretty good. I used regular Morningstar sausage because I couldn't find the maple. Make sure you chop both the apple and sausage into very small pieces. The apple won't bake all the way through otherwise and "bite-size" pieces of the sausage really mess with the consistency of the casserole.
