3/4 cup all-purpose flour
1 tablespoon sugar
3 eggs
3/4 cup milk
2 tablespoons butter or margarine
TOPPING:
2 large apples, diced
1 tablespoon butter or margarine
1/2 cup honey
2 teaspoons lemon juice
1/2 teaspoon ground cardamom
1 teaspoon cornstarch
2 teaspoons cold water

DIRECTIONS
In a mixing bowl, whisk the flour, sugar, eggs and milk until smooth. Place butter in a 10-in. ovenproof skillet. Heat at 400 degrees F for 3-4 minutes or until melted; tilt pan to coat bottom and sides. Pour batter into hot skillet. Bake for 16-20 minutes or until edges are lightly browned.
Meanwhile, in a saucepan, saute apples in butter until lightly browned. Stir in honey, lemon juice and cardamom. Combine cornstarch and water until smooth; add to apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon into pancake. Serve immediately.

I'm adding my review to raise the rating for this recipe, because it deserves better. This may not be a "real" Dutch baby, but it is a delicious dish. (My grandmother used to make a "chili" that was totally unlike what I would call chili, but it was a pretty darn good vegetable beef soup...) This is a tasty brunch dish that is very easy to make, with lots of tangy apple goodness. The only change I made was to season the apple topping with cinnamon instead of cardamom, because that is what I had on hand. Try it, you'll like it!

Really goood recipe. Made a nice change for Sunday morinin' breakfast. I found it a little too sweet and will reduce the honey next time. Cinnamon would be a nice variation, and probably cherries or any other fruit.

4 1/2 stars =) I think next time, I'll use cinnamon instead of cardamom next time though. I tried it with cardamom and a pinch of cinnamon, but the cardamom was just too much. Cinnamon's perfect for this recipe. And this was the first time I've had a dutch baby. I had no problems with that part. I made mine in an iron skillet. Wonderful!

I have had real Dutch Baby's and this is nothing like it. This is scrambled eggs with apples on top.
