Apple Galette

"A fancy yet simple version of apple pie. This version was conceived in a Montreal hotel room (with a full kitchen, nonetheless) after being inspired by all the apples at the Marche Jean-Talon. I hope you enjoy this! Why not try adding some raisins, dried cranberries, or even some almonds to the mix. Serve warm with a scoop of good quality vanilla ice cream."

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Lay puff pastry onto a round pizza pan.
  3. Mix apples and lemon juice together in a bowl until evenly coated; add sugar, cornstarch, cinnamon, nutmeg, and cloves. Toss to evenly coat apples. Spread apple mixture into the center of the puff pastry and fold edges of pastry toward the center. Brush the folded pastry edges with about 1/2 the egg.
  4. Refrigerate pastry-apple mixture for flavors and pastry to settle, about 10 minutes. Brush pastry with remaining 1/2 egg.
  5. Place pan on the top rack of preheated oven and bake for 20 minutes. Give galette a 1/4 turn and lower heat to 350 degrees F (175 degrees C). Continue baking until pastry is lightly browned, 8 to 10 minutes. Cool slightly before serving, about 10 minutes.

  • Cook's Notes:
  • These days, you'll probably find a few kinds of find frozen puff pastry available in the grocery store. I tested this recipe with President's Choice® Butter Puff Pastry. It is probably the best one you can get, since it contains real butter, whereas some don't. It also comes already rolled out, which is very convenient. I highly recommend using this product. However, if you can't find a brand that's already rolled out, just roll out the standard sized square of puff pastry out to 1/8-inch and you'll be just fine!
  • As for the apples, I recommend using a baking apple, such as Idared, Cortland, or Spartan. All of these have produced excellent results. Avoid apples such as Red Delicious, as they are not the best for baking. In this recipe, the apples are still somewhat crisp after baking, giving this recipe some excellent texture.

This was nice and I will definitely make it again but with some minor adjustments. I hadn't planned on making this and was able to put it together in no time and it cooks quite fast. If you happen to already have puff pastry in your fridge or freezer then it really is a quick dessert to throw together. I had issues with the amount of puff pastry versus the other ingredients though. Obviously one sheet of puff pastry in Canada is 450g (found out after I had started this recipe). Instead, I had a 250g puff pastry so I halved the amount of the other ingredients. I used 2 apples that weighed a total of 400 grams (once peeled and cored). The result was a bit dry. The last 8 minutes in the oven I spread a thin layer of cranberry jam on top, but of course it changed the color and flavour somewhat; I didn't have any light coloured jam on hand. The next time I will use a larger pastry surface so I can get the pastry to fold around it like a galette should. Also, I will definitely use a gelatine or light coloured jam on top to give it some moisture and shine. Thanks Liam Walshe for a very fast and easy, yet elegant solution for my mid aftenoon tea. Your recipe made my daughter's day!
