Apple Fritters

"This is an old Southern recipe. When we got home from a trip through the South years ago, I found the recipe among the brochures I brought back. I've been making these fritters ever since. -John Robbins, Springdale, Pennsylvania"

INGREDIENTS

  • 1 cup cake flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/3 cup milk
  • 3/4 cup chopped, peeled tart apple
  • 4 teaspoons butter or margarine, melted
  • 1 tablespoon sugar
  • 1 tablespoon orange juice
  • 2 teaspoons grated orange peel
  • 1/4 teaspoon vanilla extract
  • oil for frying
  • confectioners' sugar

DIRECTIONS

  1. In a bowl, combine the flour, baking powder and salt. In another bowl, beat egg and milk. Add the apple, butter, sugar, orange juice, peel and vanilla; mix well. Stir into dry ingredients just until moistened. In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375 degrees F. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

These turned out very well. The only problem was telling whether they were done or not. We ended up making them pretty small in order to make sure they weren't still gooey in the middle. I guess I should have followed the direction "rouned tablespoons". I make a sugar glaze to coat them with. In the end, they were just what I was looking for. (We live in Mexico, and I get a lot of cravings for American goodies that I can't find here)

We really enjoyed these fritters! I actually fried them in a large pot with 1/2 inch canola oil on the stove over medium heat. Only fry 3 or 4 at one time, though. If they look like they are done frying on both sides, fry a few minutes more to assure doneness. Mine were a little underdone. i also added a couple of TBS. cinnamon to batter and glazed the fritters with a glaze I made out of 2 cups powdered sugar mixed with a little orange juice until it was medium - thin. Just put about 1 TSP. glaze on fritter and let it run down over it. Let set about 20 mins. YUMMY!

I was disappointed in this recipe. I just found it to be bland despite adding in cinnamon and cloves as well. I found it difficult to know if they were done as well. I probably won't make these again. Sorry.
