took other reviewers advice and: used fresh apple mixture; apples, sugar cinnamon, touch of nutmeg and flour and cream cheese mixture. but i am lazy and i just mixed everything together. it was verrry runny. made the caramel mixture with less water than in the recipe and let it thicken up longer than the 3 mins. put the enchiladas together (did i mention it was verrry runny) seam side down and poured the remaining apple mixture over top, followed by the caramel mixture. into a 400deg oven for 30-35mins and done. not runny at all. yum! served it with real whipped cream and vanilla ice cream. a great change from apple pie.
