Apple Custard Coffee Cake

INGREDIENTS
2 cups biscuit/baking mix
1 cup sugar, divided
3/4 cup milk
1 teaspoon vanilla extract
1 cup chopped pecans
2 medium tart apples, peeled and chopped
1 teaspoon ground cinnamon, divided
3 eggs
1 cup whipping cream

DIRECTIONS
In a bowl, combine biscuit mix, 1/4 cup sugar, milk and vanilla; mix well. Stir in pecans. Pour into a greased 9-in. square baking dish.
Toss apples with 1/4 cup sugar and 1/2 teaspoon of cinnamon. Sprinkle over batter.
In a bowl, combine eggs, cream and remaining sugar. Pour over the apples; sprinkle with remaining cinnamon.
Bake, uncovered, at 350 degrees for 40-45 minutes or until a knife inserted near the center comes out clean. Serve warm. Refrigerate leftovers.

I didn't have a 9-inch square pan, so I used a Bundt pan instead. It was fine, but I needed to bake it about 45-50 minutes. The cake has a good flavor, the custard texture is sort of spongy. The apples and nuts add a good texture, and the cake is not overly sweet. I'm not sure if I would make it again.

This recipe reminded me of the bread pudding my mother used to make for some reason. I added a lot more cinnamon and a bit of ginger to each 'layer'. I also added some cranberries as I had some left over. I still found it bland..not what I expected at all. I found it to be quite a heavy dessert without being sweet so perhaps if you're not much of a sweet eater this will appeal to you.
