INGREDIENTS
1 (6 ounce) can tuna, drained and flaked
1/2 cup diced apples
1/4 cup mayonnaise
1 tablespoon chopped green onion
1 teaspoon Dijon mustard
1/2 teaspoon curry powder
4 slices bread, toasted
1/4 cup chopped walnuts, toasted
4 slices Cheddar cheese

DIRECTIONS
In a bowl, combine the first six ingredients' mix well. Spread 1/4 cup on each slice of toast sprinkle with walnuts. Top with a slice of cheese. Broil 5 in. from the heat until cheese is melted.

I liked the apple/curry combination. I cut back on the amount of curry, which probably helped. Make sure to get the walnuts covered in cheese, or they'll be blackened by the broiler.

While the curry flavor was good and what we expected, it overpowered the flavor of the tuna. You couldn't really tell it was tuna salad. The addition of walnuts was nice so, in the future, we'll simply omit the curry for what will likely be a delicious recipe.
