I am SO thankful we made this last night as a test run for Thanksgiving. WAY too much lemon in the apple topping--had to scrap it entirely the apples absorbed so much lemon juice they were inedible. Even the cheesecake came out too dense and I followed the recipe to the T. Sorry but we did not like this at all.

I'm confused as well. This appears to be an apple topped cheesecake, not truly an apple cheesecake. The apples are cooked in advance and separated. Do you use the reserved 3 tbs for topping? If so, what happens to the remaining apple topping that was placed in the refrigerator until later? If none of the apple topping is cooked with the cheesecake, why waste the time of cooking it prior. You could easily cook the apple topping and allow it to cool while the cheesecake is baking. There's something missing here.

PLEASE HELP ME: I want to make the apple cheesecake for Thanksgiving but the recipe says set aside 3 TBS of apple mixture. What do you do with the 3 TBS of apples. Does it go into the cheesecake filling? IF ANYONE SEES THIS PLEASE HELP.

This recipe was fabulous!! I had everyone begging for the recipe. I made one substitution. I used gingersnaps for the crust instead of the usual graham crackers. It was a tasty crust and added to the apple flavor. This is a nice fall recipe. I'll be making it for Thanksgiving this year.

In response to TerriC's question, I used the 3TBSP of remainder in the cheesecake, and the balance is a topping, that is why the topping needs to be prepared ahead. I made it for thankgiving and it was a BIG hit. I wasn't sure how cooking the apples would turn out, but it was good. I found the tartness of the lemons counteracted the sweetness of the cheese part.
