Deciding to start eating healthy, I took a classic carrot and raisin salad recipe and lightened it up, then added apples for extra flavor. I took this dish to a weight-loss group meeting...and they loved it! --Kim Jones of Collinsville, Illinois 

Carrot Salad

Almonds take the place of raisins in this one, and apples are also featured. Lemon juice and a big dollop of honey make this a sweet, sweet salad. Serve chilled.

Aunt Dorothy's Marinated Carrot Salad

This has been a family favorite for years. The key to this recipe is not overcooking the carrots and allowing the entire salad to marinate for at least 12 hours. For a spectacular presentation when serving, garnish the top with rings of each color of bell pepper and rings of onion. Serve alone or over a bed of lettuce.

Make a big batch of this terrific salad, because it will go fast. Shredded carrots, diced celery, a scoop of raisins, and mayonnaise with a dash of vinegar. 

Minted Carrot Salad

Carrots are cooked until tender, grated, and then topped with tomato dressing and mint. Note: You could try using julienne carrots instead of grated, if you like.

Apple Beet Salad
