The title "Apple Carrot Muffins" caught my eye. But what drew me in were the ingredients -apples, buttermilk (wow), carrots and Raisin Bran cereal! I had a hunch that these would be delicious. And they were! Moist, fluffy, tasty and most of all healthy! Under 200 calories and only 7 grams of fat. I finely grated one large fuji apple, peeled, and the carrot. Also, I noticed the apple released some of its juices which I added into the batter. I followed the recipe, not making any adjustments. The batter filled 24 muffin tins. I guess mine were a little smaller than normal size muffins plus I don't have texas jumbo size pans. My mouth was watering at the wonderful aroma emanating from the muffins this morning! Apples, carrots, and cinnamon...Mmmm. The muffins all rose up nicely and baked in 20 minutes. I had nice golden brown muffins with specks of grated carrots, walnuts and raisins peeking out from the muffins. The muffins were moist, fluffy and tastes just like carrot cakes! The raisin bran cereal just baked right into the muffins. The fuji apples adds a nice round sweetness with subtle hint of cinnamon. I could taste the plump raisins. The walnuts definitely gave these a nice texture with the crunch. The ingredients, directions, and baking time were perfect. I am so glad I made these muffins this morning. These were a pleasant surprise and SO delicious! I think would be nice baked as a warm muffin for breakfast on a cold winter morning or during the fall season!
