WOW! I made these for my picky 2 year old that will NOT eat veggies. He absolutely loved them :) I did make some changes for our family, 1/2 whole wheat flour 1/2 reg flour, I used 1/4 cup cinnamon applesauce instead of the oil and I did not use the walnuts. This is a great recipe, thanks for sharing!

Really nice muffin. I added about 3/4 cup raisins (I thought the amount of raisins in the cereal was kinda wimpy). It's a light, but flavorful, healthy muffin.

this is a wonderful recipe. I replaced the oil with butter and used 2% milk instead of buttermilk. Also took suggestions to use 1/2 cup whole wheat pastry flour(I prefer to King Arthur's fine WWPF) and 3/4 cup all purpose flour.The muffins came out with crispy top and very tender and moist inside. I did chopped the apple finely and it was extremely delish with rich flavour of the apple,carrot,raisin and cereal,etc.Next time i would reduce the cinamon to 1/2 - 3/4 tsp just so it wouldn't be too strong to me. This is my favourite muffin recipe so far.Definately 5 stars.

This a good health food muffin. i took other suggestions and halved the white flour with whole wheat and i used 1% milk (what i had on hand)instead of buttermilk. I'm pregnant and this was perfect for tricking myself into eating more fruit and veggies and still feel like i'm indulging. However, this is by no means the best muffin ever.

Left out the walnuts and substituted whole wheat flour. Not very sweet but very moist. Will be great for a quick breakfast.

The title "Apple Carrot Muffins" caught my eye. But what drew me in were the ingredients -apples, buttermilk (wow), carrots and Raisin Bran cereal! I had a hunch that these would be delicious. And they were! Moist, fluffy, tasty and most of all healthy! Under 200 calories and only 7 grams of fat. I finely grated one large fuji apple, peeled, and the carrot. Also, I noticed the apple released some of its juices which I added into the batter. I followed the recipe, not making any adjustments. The batter filled 24 muffin tins. I guess mine were a little smaller than normal size muffins plus I don't have texas jumbo size pans. My mouth was watering at the wonderful aroma emanating from the muffins this morning! Apples, carrots, and cinnamon...Mmmm. The muffins all rose up nicely and baked in 20 minutes. I had nice golden brown muffins with specks of grated carrots, walnuts and raisins peeking out from the muffins. The muffins were moist, fluffy and tastes just like carrot cakes! The raisin bran cereal just baked right into the muffins. The fuji apples adds a nice round sweetness with subtle hint of cinnamon. I could taste the plump raisins. The walnuts definitely gave these a nice texture with the crunch. The ingredients, directions, and baking time were perfect. I am so glad I made these muffins this morning. These were a pleasant surprise and SO delicious! I think would be nice baked as a warm muffin for breakfast on a cold winter morning or during the fall season!
