Hhhhmmmm,I made this at 12 in the morning and it was all done by around 2 given that I am a beginner. I had to use grated lemon peeling instead of vanilla because we didn't have any vanilla(its a trick of my mom's that always works)! It's a simple and well tasting recipe!

This recipe was FABULOUS! I skipped the butter sauce, and dusted with powdered sugar and served warm with whipped cream. (Tho it is GREAT without anything on it as well!) I also thought the batter was too dry so I added an extra egg (I doubled the recipe, THEN added the extra egg) and I added in a bit more nutmeg and some cinnamon, I also added about 3 tbl. molasses. It ended up making a 9x13 pan, and over night my family ate 3/4 of it! Way to go! Another hit!

I have been making a similar version of this cake for the past several years after we pick apples at the orchard. This apple cake is very good "without" the topping. The topping is very sweet and almost takes away from the cake itself. Next time I will cut the topping in half or just dust with powdered sugar.

This cake got rave reviews when I recently served it at a party. I made a couple of small changes: the batter seemed stiff, so I added 1/2 cup apple sauce to it, and I made only half the butter sauce and poured it over the cake when it came out of the oven. This is a moist, very tasty cake, and served with ginger ice-cream you can't beat it as a harvest-time dessert. Will definitely make again.
