It didn't quite seem to work out like I wanted it too . . . I think part of the problem was my skillet wasn't big enough so it took awhile for the chicken to brown. I didn't bread the chicken, made it seem healthier (like the rest of the dish). The pasta portion was great, and though the cooking of the chicken was a bit chaotic, it ended up tasting very good!
We used a cold shrimp salad for a side dish which also had some lime in it (as well as soy and ginger - called Caribbean Holiday Shrimp on here), so they made a great pair!
