Wonderful!! I have never had enchiladas before and I wasn't sure what to expect. My family loved them. My husband said they were awesome. I followed others suggestions and poached the chicken whole in the taco seasoning, onion, water and garlic and then shredded. It was't too labor intensive done that way. I then reserved the poaching sauce and followed the recipe from there, omiting the addition of the water later on since I saved the poaching water and spice. I also added a can of black beans to the chicken just for added texture and flavor. They were wonderful. Thank you for a great recipe.

AMAZING!!! I made these last night because my boyfriend loves enchiladas although I don't really care for them.... not anymore! I absolutely loved these, as did he. Followed the recipe exactly. Didn't even need sour cream or anything else served with them. Thank you for the fantabulous recipe!!!

delicous. My new recipe for enchiladas! I don't mind all the work because i love to cook, i do although, think they are waay to big in size, i could only eat half, so next time i might use smaller tortillas, and make several instead of 5 big ones. Thanks for the great recipe!

Oh, Angela, you are sooooo right! These enchiladas ARE awesome. My husband, who rarely goes crazy over anything, LOVED these. My 8 year old son went back for more, which is unheard of. My 19 year old son could have eaten half of the recipe himself. Even the picky neighbor girl gobbled them up (after meticulously picking out the onions). This will be my go-to enchilada recipe from this day forward. Thanks for sharing it!

These were perfect! I used left over pork loin and shredded it. Used some salsa in the chicken/chilies mixture. Easy and yummy!

These were outstanding! I used three pre-baked chicken breasts from my deli and used Monetary Jack cheese instead of cheddar. Next time I'll try with corn tortillas. Yum-o!---- UPDATE: You must try these with corn tortillas, they're so much better this way. P.S. You only use like half of the meat mixture so plan accordingly; you may want to double the sour cream/ cream of chicken mixture, buy extra cans of enchilada sauce and olives, and more green onions so you can double the recipe; you don't want to waste all that chicken mixture. Also, there is no need to shred the chicken with two forks, just use your fingers and save some time for crying out loud:)

Didn't really care for these. The sour cream and cream of chicken soup + chili powder didn't really "go" with these. Also, I saw no need in heating that mixture. I think you could just mix together in a bowl and add that way. In addition, the chicken mixture was way too wet for an enchilada filling, so I ended up making this a layered casserole with lots of corn tortillas to try and absorb some of the moisture. The taste was ho-hum, what I would equate to a Taco Bell version of "enchiladas".. Being from TX, maybe I am just hard to please with Mexican food, but these just didn't really cut it. My 3 yr old and I didn't like, but hubby seemed to think they were more thank okay.. Sorry, but I won't make these again. There are several other enchilada recipes with "cream ofs" that taste MUCH better..

I love this recipe! I have made some changes that make it easier for me on a weeknight: I put the chicken (sometimes I even use frozen-solid breasts or thighs) in a crockpot with the taco seasoning, garlic powder, onion powder, chili powder, chopped onion + a little water in the morning. Then when I get home from work the chicken is easily shredded and I add the other filling ingredients to the crock pot and stir it up. Then I just assemble per the directions. I also use green sauce instead of red. This way it only takes 15min to get them in the oven and the meat tastes great from simmering all day in the spices. Thanks Angela!

These are the best home-made enchiladas I've ever had. I used the in-laws' homegrown cayenne peppers instead and it added a nice heat to the dish. Definitely worth making again.

Very good even with my changes so the recipe must be great written as is. I omitted the lime juice (didn't have any) and added corn and black beans to the filling mixture (with the green chiles). Then finished the recipe as written but with jalepeno and cilantro tortillas (they were what I had left) and it was very tasty. I just looked at the calorie count though and now can't eat anything else for the rest of the day!! A great recipe...does make quite a few messy dishes.

This is a great recipe. I changed it a little bit. I cooked and marinated the chicken in a homemade salsa for 24hrs. I omitted the packaged taco seasoning. I also used a mixture of cheeses. Very good!
