I used canned chicken to save time and left off the black olives. My husband loves these. The first time I made it, I thought the green chilies would be too much, but they weren't. This is really really good!

My husband walked into the house and the first thing he said was “honey it smells like a Mexican restaurant” Well, it may have smelled that way but I can assure you it tasted that way too! This has got to be one of the best Mexican dishes I have made. So very tasty, the kind of tasty where no ones talking while eating lol. No left over’s here mister. I like to stay true to the recipe, otherwise what’s the use in rating it if I made it my own? Very good AS IS!!

This recipe was AWESOME!!!!! I made this for my wife and she went nys about it. The only thing I changed was I used Chipolte taco seasoning instead of the regular taco seasoning. It gave it a nice smoking flavor and a little kick. Other than that is was real easy and really good.

Excellent enchiladas recipe. It was a lot easier than another recipe I tried and it was way more yummy.I used fat free cream of chicken soup, only 1 1/3lb chicken and 2 cups of cheese and it was perfect for my family of four.

This is a great recipe, but I have to admit...I didn't follow it exactly. I didn't boil my chicken breasts, because you get so much more flavor from panfrying. To cook chicken breasts, I sprinkle salt, pepper, and chili powder over both sides of chicken. Fry them in vegetable oil and a pat of butter until lightly browned. Meat does not have to be completely done. Put breasts in a glass bowl with the juices from pan (deglazed by a little water). Cover with foil and continue to cook in 350 degree oven while preparing the rest of the dish. Sorry, but I didn't time it. Also, instead of adding 1 cup of water, add enough water to chicken juices in the bowl to equal 1 cup. Add that to the meat mixture instead of straight water. I'm sure this recipe is much less healthful, but these simple steps add LOTS of flavor. I fixed the recipe by the directions the first time, and everyone liked them. The second time, I made it like I stated here, and my husband thought it was a completely different recipe. He raved over it. Even my PICKY kids loved them.

This is delicious! I used light sour cream and green olives and it was delicious! Use low-sodium soup if you can find it, the taco mix makes it salty enough.

These were excellent. I cut down on prep time buying a grocery store BBQ chicken. Didn't use the enchilada sauce, I just spooned some salsa on top before I added the cheese. I also used jalapeno corn tortillas. Yum!

I've never rated a recipe before, but this one was too good not to! Only substitution I made was lemon juice for the lime b/c I was out of lime juice...otherwise made it exactly as written. No need for Mexican takeout with this one in the recipe box! Two thumbs up plus a toe!

YUM!! I didn't put olives on top because I don't like them, and added a bit more cheese. My hubby thought it was a bit too salty, so those sensitive might have a problem with it.

My hubby and I agree..this is the best mexican I've ever made! I am not normally a fan of made at home mexican (hubby loves it, however) but enchiladas just sounded good so I decided to give this a try. Oh my gosh, completely fantastic! I will definitely make this again and again (doubt hubby will let me forget about it!). I did everything just as the recipe states..I did have trouble making all of the filling fit into 5 tortillas so it ended up more like a casserole than straight up enchiladas but we didn't care, it was too tasty!

Fantastic! I followed the recipe almost exactly- I just omitted the green onions from the filling (still used on top) and used light sour cream. My boyfriend said that it was the best meal I had EVER made. Very flavorful.

I thought these were absolutely phenomenal. Fantastic flavor and yumminess! My picky 8-year old devoured them and said they are his favorite. I definitely don't see them as authentic or anything like that, and mine came out a little soggy and fell apart into a pile of mushy enchilada when I served them, but they tasted SO GOOD that it did not matter! I probably should have let them cool a little before I served them to prevent that from happening. The only thing that I changed is that I used corn tortillas instead of flour, because using flour just seemed weird to me. I'm eating leftovers right now! Yum, yum, yum! Thank you!

Fantastic! Will definitely make again. Love the sauce (chicken soup and sour cream) that makes it! Didnt have enchilada sauce so I had to use mild taco sauce (airing on the side of caution of how much) Turned out just fine. Also, I didnt have the 12in tortilla's I think mine or 8-9in but, I thought they were perfect especially if your feeding little ones. I gave this 5stars.

I've been using this site for many years now and this is the first review I've ever written. These are by far the most delicious enchiladas I have ever made. They constantly get rave reviews by my family and not even a local restaurant can do them justice. To keep the calories down I use non fat cream of chicken and light sour cream. I suppose these are obvious changes which normally change the way an entire recipe tastes but not in this case. I will be making these many more times!
