Definitely add jicama, if you can get it, for a sweet and juicy crunch. Cucumbers will suffice too. We used frozen corn instead of canned, not cooked and barely thawed. For a long time I haven't been able to eat this salad, but now (summer '09) there's a yogurt-based Ranch dressing (in the produce refrigerated section) that allows my lactose intolerant stomach to digest this salad again!
