INGREDIENTS
1 cup raisins
1 cup water
3/4 cup butter, softened
1 teaspoon baking soda
2 cups packed brown sugar
1 egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt

DIRECTIONS
In a small saucepan, combine raisins and water. Bring to a boil; cook until liquid is reduced to 1/2 cup. Set aside to cool.
In a large mixing bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to creamed mixture. Stir in raisins with liquid.
Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 10-12 minutes or until the surface cracks. Remove to wire racks to cool.

Not an extremely sweet cookie, which I didn't mind... I made it with one cup of brown sugar and one cup of splenda, and it still tasted quite good. Pretty hard to mess up, pretty good cookie when there is no oatmeal around :)

The only changes I made were: I had to use 1 cup packed brown sugar and 1 cup white sugar because I didn't have enough brown sugar. Plus, I added 3/8 tsp. of cinnamon. My husband absolutely loved these cookies. He said they were the best cookies he has ever had. He was a big fan of oatmeal-raisin cookies, but has now asked me to only make the Amish Raisin ones instead. Thank you very much for the recipe.
