'We enjoyed a hearty breakfast bake during a visit to an Amish inn,' recalls Beth Notaro of Kokomo, Indiana. 'When I asked for the recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this version my family loves. Try breakfast sausage in place of bacon.'

Double Cheese Casserole

This is similar to lasagna. It's fairly easy to prepare, and my picky eaters love it! The cheeses are cream cheese and cottage cheese, which enables you to control the fat content without cutting on flavor. Garnish with some grated Parmesan cheese, if desired. 

Philly Cheesesteak Casserole

The taste of this casserole is reminiscent of a good Philly cheesesteak. Even though it goes against my normal condiment rules, ketchup is a must alongside. Not exactly low in fat, but neither is it's namesake.

Zesty meat, beans, and peppers topped with sweet corn bread. A great, fast, family pleaser or potluck dish. Depending on the crowd you're trying to please, you may want to jazz it up: Bulk up the meat mixture with extra veggies, add Cheddar cheese, jalapeno peppers, or chili powder to the cornbread.
