I made this twice so far - once for a potluck breakfast and once for Christmas Day. I found it absolutely delicious but my boyfriend and his brothers said there wasn't enough egg. Of course, they ate the whole pan, so who knows. I loved the cottage cheese touch too! I will make again!

I usually don't like casserole's but this one is WONDERFUL! I served at a brunch and everyone loved it. I changed it up a little. I did not use onion, instead I used the hash browns with the peppers and onions mixed in already! I cut down on the swiss and used more cheddar (half mild and half sharp). YUMMMM

I really liked this recipe. Brought it to a brunch and it was enjoyed by all. I followed some suggestions and added more eggs (10 in total) and shredded my own potatoes (not much work considering the savings, it was 2 large potatoes). I used veggie breakfast sausages and would probably add a little salt if making it vegetarian but if using bacon, ham or meat sausage it would be fine. I assembled the night before and baked in the AM, next time I would bake at night and just warm in the oven in the AM.

This is the best breakfast casserole I have made. Did not change a thing. Took to church for a breakfast and everyone wanted the recipe. Will make again and again. Thanks for sharing!

Great recipe. The only change I made was added some seasoning to the potatoes. Delicious, and freezes well. So I cut into squares, saran wrapped single portions, and put them in a freezer bag. When needed, microwave for 1 and a half to 2 minutes. I like it with a little Hot Salsa on top.

I have to join the more than 200 people who love this!! I served more than 30 people this morning and the concensus - this is the best casserole we have had! I will be making this again and again. Couple of changes - cooked the bacon in the oven. Used diced hash browns and cooked those with the onions. Also, baked this the night before and then reheated in the microwave the next morning. Can't imagine how good it would be baked that morning, considering how good it was reheated.

This was fabulous and classic! The cottage cheese does not add any wierd taste to the dish, just keeps it moist. I made this as written, used sausage. I didn't end up adding all the 2 lbs of sausage but close to all of it. This dish filled up the 9x13 dish just right. I used cooking spray and it dish up beautifully. I took this to work and got lots of requests for the recipe.

I found that there were too many hash browns in this recipe and not enough eggs. It wasn't bad, but not one I'd make again.

Thankful for all the cooks that made this before me - wonderful suggestions - such as more eggs, mozzarella cheese, green peppers. I made my own shredded potatoes - only problem was that I made it the night before and some of the potatoes turned gray - didn't notice the color when it was cooked. Served 4 and there was a lot left over - could have served at least 8. Everyone wanted the recipe!

I love breakfast casseroles! We have a large family that visits often and making "breakfast" the night before is a great time saver. I am always looking for a new twist on the old favorites. This is our new favorite! The swiss cheese really changes up the flavor. I wouldn't change a thing in the recipe!

Yum! I could eat this for breakfast, lunch or dinner. We used canadian bacon instead of regular bacon and added 2 more eggs. Also, next time I'll save the money and not buy the pre-shredded hash browns and just shred my own potatoes to add.

I have made this recipe 4 times since Christmas and my son said this will be his request for his birthday meal. I am a vegan, so I can only say that nothing was left each time I made it. That's a keeper.

This worked out pretty well. I used a sweetish chicken sausage, some pepper jack and added red and green peppers. I will make it again and play around with spicing it up part. Also, it is pretty hash browny and less eggy than you might expect.

I assembled this the night before and then baked it in the morning. Based on the other reviews, I added 3 extra eggs. Instead of bacon, I put in veggie bacon which was ok. I think next time I will add sausage instead. Also, IMO there were too many onions (then again I'm not hugely into onions). Also, next time I'd cook them before adding them to the casserole. I just threw them in the mix uncooked. Also, I might throw garlic in as it could've used a little more oomph!

This was really good. I did change up the recipe some for our own tastes and what was on hand - omitted the onion, used sausage instead of bacon, and used mozzarella cheese instead of the swiss.

THIS WAS A VERY GOOD RECIPE.I AM A COUNTRY GIRL SO I TRIED THIS WITH GROUND RABBIT (WHICH WAS MADE BY MIXING WITH BACON).THE ONLY THING I CHANGED WAS ADDING ABOUT 1/2C. BELL PEPPERS.I WILL MAKE THIS AGAIN WITH THE BACON BECAUSE I THINK IT WILL HAVE A REALLY YUMMY TASTE.

This is absolutely the best breakfast casserole that I have ever made. I have made it twice, and both times it has been a huge hit. I saw reviews that suggested more eggs, so I used 10 and it was perfect. I wouldn't use any less. Also, I didn't have swiss cheese on-hand, so I used mozzarella instead, and it was delicious. Also, I would recommend using the maple sausage. Both times I have made this, I have prepared it the night before, and just baked it in the morning... Very good recipe!

This is the best breakfast casserole that I've ever had. I made it for our New Years' Eve brunch for family. I crossed my fingers & hoped for the best. I used sausage instead of bacon & the results were outstanding..everyone loved it. Can't wait to try it again with bacon.
