I have been eyeing this one for awhile. I've never made a breakfast casserole as some just sound odd or really heavy. I compared this to a couple others over and over and finally decided to go for it! I experimented on a small group of family for breakfast. They loved it! I liked it because it doesn't have a ton of eggs - don't let that scare you, it was still VERY moist! I did add cayenne & dried mustard as others suggested and I think you could spice it up however you like. I did add a bit more than a pound of bacon and next time I think I'll add even more. I served this with Easy Morning Glory Muffins on this site and fresh fruit. Easy to make ahead and delicious! Thanks!!

I halved the recipe and followed the directions to a T (with the exception of using fresh "Simply Potatos"). It had a wonderful flavor, was very easy to make, and is definetely a keeper.

This makes a great breakfast casserole "kit." I get all the ingredients together, pre measured, cook the bacon, before I visit friends and family for over night trips. In the morning, the ladies sip coffee while the guys throw together the "kit." I reduce the onion if there are kids joining us.

I hate to be the odd one out, but I wasn't crazy about this at all. The mixture seemed disproportionately dry, so I added more eggs. My hash browns weren't tender by the end of the baking time. I found it pretty bland, and that's AFTER I added cooked crumbled sausage; extra salt and pepper helped. I like the idea of using cottage cheese so I might play around with it, but I won't make it as-is again.

Very good! I made this when my in-laws came to stay. Everyone liked it very much! The only thing I did differently was add an extra egg, but only because I wanted to finish the carton!! Very yummy the way it is!

this was a really good casserole. i made it for dinner and everyone ate it. and everyone came back for seconds and thirds. it is really tasty. kind of on the fatty side though, but really good, homey and warm.

This was great. I made it yesterday for a birthday brunch. I made mine with sausage, I had several requests for the recipe and they were very surprised to learn that there was cottage cheese in it. I'll be making it again I'm sure.

What a great dish! to cut down on the fat and calories, I used turkey bacon, fat free cottage cheese and about half the cheese the recipe called for (what was posted seemed like WAY too much). I also added pepper and paprika - DELICIOUS! My boyfriend and I both loved it.

This was great. A nice change from the typical breakfast casserole. I stuck to the original recipe other than adding a tube of country sausage as well as the bacon. It gave it a nice kick. Great for dinner as well.

I followed the recipe exactly and did not like the final product. It was easy to put together but for my family it was too much swiss cheese and not enough egg. It could have used some more seasoning as well. I won't make it again.

amazing dish! used turkey bacon to cut fat a little - cooked onion after cooked bacon (since turkey bacon produces less oil). added a little milk to eggs (like 1/3 - 1/2 cup). next time will use red bell pepper to add some color. i had to cook it a little longer for it to set (maybe cuz of the milk? who knows?) but truly an absolutely delicious meal!

Made this for breakfast for my coworkers this morning and liked it so much that I ran out and got the ingredients to make it again for my family. I'm not a fan of cottage cheese but you'd never know it was there! I used both bacon and sausage. Serve it with a little salsa for an added "zip."

This is a FABULOUS recipe. The only things I changed were the number of eggs (10 instead of 6) and I added mozzarella cheese to the mix. The whole casserole was almost gone in 20 mins with everyone saying how wonderful this is. I prepared it the night before and baked it in the morning. A KEEPER!!

I made this on a recent trip with my large group of friends and they loved it. i did replace the bacon with sage pork sausage but i'm sure the bacon would be good too. i will definitely be making it again on my outings with a crowd of friends.
