I really enjoyed this, I did take the advice of some others and broil the top of the casserole. I made this for my mother-in-law who is from California and she enjoyed it said she had never had anything like this. I might try sausage next, especially the apple sausage that come during the fall season. I will be making this again to take camping this fall. I plan on pre making it and heat and eat while there.

I think that both the cottage cheese and the swiss cheese make this recipe something that stands out from the rest. I made it for an extended family Sunday brunch, and it was a hit! I will definitely be making this one again.

I made this casserole for a breakfast after my daughter's christening. I had made two different casseroles, but this one got all the rave reviews, and was gone by the end of the meal.

This is a fantastic breakfast casserole. I'm not a big fan of the bread type casseroles, and this was just the ticket. I followed the recipe exactly besides using 7 eggs and adding a tad of salt and pepper (based on other reviews). Don't be afraid of the cottage cheese, you will never know it is there. I did broil the casserole for a few minutes when it was finished baking just to melt the cheeses evenly on top (dind't want any cottage cheese showing or my husband wouldn't eat it!). I'm making this again this weekend for a baby shower as it is so easy. Will be intersting to see if a group of gals enjoy it as much as my husband and his friend.

I use vegetarian "sausage" crumbles instead of bacon. And I also like to add some chopped green pepper. I make this for a great, hearty holiday breakfast on Thanksgiving and Christmas and it holds us over until our big family dinners.

Fabulous! I substituted chopped broccoli and fresh mushrooms for the bacon, added spices (garlic and chili powder) and reduced the cheese slightly. Got an A+ from the whole house, omnivores, vegetarians, kids and adults. Will be my go-to recipe for breakfast casseroles. ~nyx

Fantastic! I halved the recipe, used four eggs total, turkey bacon, 1 cup of cheddar only and placed the hash browns on the bottom of the pan.

Really tasty and rich. Made for just our family of 4 but should save this for company because a little goes a long way! Used 8 eggs. Used southwest potatoes. Perfect easy breakfast casserole I've been looking for.

A++! This was really, really good. I halved the recipe and there were still leftovers! I used southern sytle hashbrowns (instead of shredded) and it turned out great. YUMMY!!!

Wonderful! I didn't have the shredded hashbrowns so I used another type, I wish I hadn't cause I could see how much better the shreds would have been.

I made this for a group of guys and they loved it! I used sausage instead of bacon and it was good.It was very easy to make too. As a woman I thought it was just okay. It was really cheesy and that's not my preference. If you like cheesy potatoes then go for it.

I made this for our women's ministry meeting and got rave reviews. I did substitute a couple of things, simply because I didn't have some of the ingredients. I used breakfast sausage instead of bacon, and half sharp cheddar cheese and half mild. I also used a couple more eggs than it called for after reading prior reviews. It was really delicious. Thanks for the recipe!

Made this for my Mom's Birthday breakfast and it was big hit. Was short a full pound of bacon, so added some cooked hot breakfast sausage also. As others suggested, increased eggs to 8. Mixed everything together and refrigerated in a covered bowl the night before. Baked in the morning and it was easy and delicious. Leftovers heated and tasted great. My family has requested this again soon.

This casserole has gone over real well with the family. My husband made it and took it to his men's breakfast; he was one of the few to have no leftovers. It is recipe that can be changed some and still taste great. I have used a 1/2 pound bacon, crumbled and 1/2 pound spicy sausage; for a change of pace.
