YUM. I'm not a huge breakfast casserole fan but this was fantastic and very easy. Even my son, who is a picky eater, told me to be sure and keep that recipe. That's quite a compliment from him!

Although I've been cooking for many years, I've never actually made a breakfast casserole before. I was very excited to have this be my first. I used turkey bacon and added dried parsley for a little color. I prepped the casserole the day before, but kept the bacon/onion mixture separate from the potato/egg mixture until I was ready to place the dish in the oven the next morning, because I didn't want the crisp bacon to become soggy in the refrigerator overnight. The bacon retained its crisp texture; I think this was a good idea. I served this Christmas morning with biscuits and honey butter. The casserole/biscuits were done to perfection just as we finished opening our gifts, which was very, very cool. Thanks so much for the receipe :-)

Had to leave out the cottage cheese this time for picky eaters...but this turned out pretty good even without it. I used leftover baked potatoes and grated those and used monteray jack/colby instead of swiss. Next time I'm going to at least make some with the cottage cheese.

Made this for Christmas Brunch today! This is absolutely DELICIOUS! HUGE hit! I made two small changes: I shredded my own potatoes in my food processor...(preservative free that way...and much tastier!) And I used a little less Swiss cheese and a little more cheddar (personal preference). I will keep this recipe and make it over and over. I also took the suggestion of cooking the bacon alone and crumbling, then adding the onion to a little bacon grease and then cooked them alone. I think maybe next time I will saute some green pepper and mushrooms with the onion and add those in. Wonderful! Thanks for this recipe!

I made this for my family on Christmas morning, and they all loved it. In hindsight, I probably should have used the sausage instead of the bacon, since it would be easier to dice. But all in all, it came out perfectly. Thank you very much for the recipe, & Happy Holidays.

Fabulous. My go-to recipe I use all the time now - have even made enough to feed 80+ people, two different times! I use sausage, throw in some bacon bits for added flavor, use Monterey Jack/Colby mix instead of Swiss, and use southwestern style hash browns (with peppers & onions) instead of dicing/cooking onions. I also do 7 eggs. Get asked for the recipe constantly - total hit! Thanks!!

I made this for a brunch party. I did add some extra eggs, but will add more next time, because I like the egg dish, not the potatoe dish taste. About 10 minutes before the dish was finished cooking, I added a layer of very thinly sliced tomatoes and sprinkled a light layer of shredded cheese over that. This gave it a nice presentation and a little bit of a fresh taste. Thanks, going to make it for my Christmas morning with my kids breakfast.

Pretty good recipe, but I felt it needed more seasonings. It seemed a little bland so as I cooked the onions and sausage I added a bit of fresh ground pepper, minced garlic, and dried oregano. Left out the cottage cheese 'cuz I didn't have any on hand. Didn't really miss it, but it would add a creaminess that would be nice. Reheated nicely in the microwave and the taste kept getting better and better.

This was truly fantastic! I made it for my in-laws' visit at Christmas, so I needed something quick, tasty and presentable. I used leftover bacon that I just chopped up and then sauteed with the onion (and added garlic). I was really afraid of the cottage cheese because we aren't big fans of it plain but decided to go for it. You can't tell it is there but the flavor is amazing, so don't leave it out! I also added chili powder and really liked the "pop" it gave. My cheese preference was half Cheddar and half Colby Jack, with some Parmesan just for fun. Also, for lack of time, I used pre-shredded potatoes (found in the egg section). I made this the night before and cooked it in the morning, which added about 15 minutes to the cook time. Super versatile, easy to prep, can make ahead and tasty!

This was absolutely delicious and a huge hit at a brunch. I used mozzerella cheese instead of swiss because that is what i had available and it still turned out great. I will make this again, may try it with sausage next time.
