I made this dish for Christmas breakfast. My very picky son in law ate half the casserole. I loved it as well and made it for a pot luck at work and everyone said I should have doubled the recipe so they could have had more. I will make this agian. I followed the recipe exactly but thought next time I might try some green pepper in it.

Great recipe. I cooked the bacon and onion together and put it in the fridge overnight so that I could quickly mix everything together and bake on Christmas morning. Next time I try this I will add more eggs, as the recipe is pretty rich. Also, don't wait for the bacon to get crispy with the onion - almost impossible cooking it that way. Next time I may try to cook the bacon first and then cook the onion in the bacon "juice".

This was awesome. Made it last night and was suprised to find I had additional kids coming to supper. Adjusted the recipe by adding additional 2 cups hashbrowns, another 1/2 cup cottage cheese and added ham to the recipe. Left out the onion cuz I wasn't sure the teens would like it. Four out of five came back for seconds. Heats up nice the next day as well. Will probably increase the meat more cuz hubby likes meaty stuff. Also I can see where the onion and adding green peppers would throw this one over the top. Out of the three breakfast casseroles I've tried from this site, this is by far my favorite. Great!

Yum! I have made this twice and both times we have really enjoyed it. My husband who is not a cheese fan even loved it. I love that it requires no canned condensed soups. You can adjust the cheeses as you wish. The 2nd time I prepared it all the night before and pulled it out of the fridge while I was preheating the oven the next morning. Made it even easier on a busy morning (I made for Christmas)and noticed no difference in the taste. Will definately make again. Great for company.

This was sooo good! Such a nice change from the same ole breakfast casserole I always make! I made this for Christmas Brunch & everyone loved it! It is more of a hash brown casserole than I originally thought, but I loved it anyway! Wouldn't change a thing.

Very good, I did make a few minor changes...I decreased the cheese a little, used sausage instead of bacon, added some green pepper with the onion and used fresh shredded potatoes instead of packaged.(shredded with food processor and rinsed until the water runs clear). I had to cook it about an hour and a half..very good and even better the next day.

i made this for my husbands b-day breakfast and i think it made his day. the only thing i changed was that i added mushrooms (hubby is a mushroom fanatic) and some cut up breakfast sausage links. I know it was super fatty, but it was his b-day treat. and boy, was it good. we will make this again. mmmmmm.... bacon

This is the VERY best breakfast casserole I have ever had! Easy to make & super yummy, don't bother with any other. I used a mozzarella and provolone shredded blend instead of the swiss and sprinkled the remaining cheese on top.

Delicious! Made this morning and my family went back for seconds! I omitted the cottage cheese since I had none and added about 1 1/2 c. of cream and 1% milk. I also used up some whole wheat and white bread ends and cut them into cubes. I layered the cubes of bread on the bottom, then the potatoes and so on. I also used 1/2 lb. of bacon and 1 box of breakfast sausage cut into little pieces. So easy and very filling. Happy New Year!

For several years, I have been searching for just the right breakfast casserole recipe for Christmas morning, and THIS IS IT. It was the first thing gone on the breakfast table, and they liked it so well, we made it the following morning, too!! I had to bake it a little longer than indicated - I think I had it in the oven for about 55 minutes - you can tell when it's ready (it won't jiggle in the middle). Other than that, we followed the recipe to a T and it was wonderful!

I made this on Christmas Eve for the next morning. It was wonderful! Our family has brunch on Christmas after we open our gifts. It was nice not having to cook, just pop it in the oven. I added 3 more eggs after reading other remarks. We love swiss cheese and I would not change anything else. It was so good and easy to put together. Thank you for a recipe I will make again!
