This was an excellent breakfast casserole. I did add 1 lb of Owens regular sausage, and it was great! This will definitely be added to my regular rotation.

I made this a long while ago and never rated it. It was good the way it is, but I agree with those who said it was little bland. Perhaps with some seasonings, this would have been a four or five star! Or possibly just changing the bacon to seasoned sausage of whatever kind you like. It was good, but definitely could use a few seasonings for taste. :)

It was okay. It really needed something though, a little more spice. I did add 2-3 more eggs though. I am going to try using breakfast sausage next time. I will make again, but I think I will experiment more with the seasonings.

I thought that maybe I did something wrong, but after reviewing the recipe again, I know it wasn't me. so I don't think I screwed up. Sorry, I really don't enjoy giving awful reviews, but this was really bad.

This is a great recipe. I made this for a baby shower I catered and everyone loved it. I then made it for my family, who do not like egg in their casseroles, and they devoured it. The only change that I made was the suggested one of using sausage instead of bacon. The second time I made it, I used both. This is a definite keeper.

Perfect combinations. Some breakfast casseroles are too bland or too heavy, this is a good combination of texture and flavor. Easy to make also.

I was a little scared of the cottage cheese - almost did not add it. I'm glad I did. This is super moist and very good. I used moz. cheese instead of the swiss.

I followed this recipe precisely. I found it to be too cheesy, and blah tasting. I had to eat all the leftovers over the next week because my family wouldn't eat this- and I hate to waste food. Sorry.

Wonderful though I made a few minor changes. I used the called for amount of Cheddar but I shredded my own and made it aged cheddar. I do not care for Swiss, so I used equal parts Asiago and Monterray Jack instead. I also substitued Maple and Brown Sugar breakfast sausage, with casings removed, in the place of bacon. I also left out the cottage cheese because my husband does not like it. I used 4 eggs and 4 egg whites to make it a little more healthy.

This is a great breakfast casserole! I made this dish for Easter 2008 and it was a hit. I read through the previous comments and did a few modifications as well - put in sausage & bacon, dash of garlic salt, and added salt and pepper. The cook time is also longer than 35 minutes

Not a hit in my house this morning. Maybe it's because I tweaked the recipe based on what other reviewers wrote and the ingredients I had on hand. I used refrigerated hash browns, put on the bottom of pan and baked for 7 minutes. Didn't have enough cottage cheese, so added more swiss cheese. Didn't look like enough egg, so added 3 more eggs. It was rather bland and the swiss was overpowering. If I try this again, I'll make it exactly as written and see if that's better.

I added rotel, and I didn't mix the bacon in with the rest of the ingredients...I added it to the top at the end. My family liked it.

This was very good, but I only rated it 4 stars since it wasn't enough volume for a 9x13 pan with only 6 eggs. I increased to 9, and still think it could have used some more. The other quantities were exactly like the recipe, except that I added a tsp of seasoned salt since other reviewers had said it was bland. I used Simply Potatos has browns instead of frozen hash browns, and browned them and put them in the bottom of the pan so it would be more of a layered casserole. I think the browning may have been unnecessary though. Everything else was mixed together as a top layer. I refrigerated and cooked it in the morning and it turned out great. My only other comment is that 4 adults ate 2/3 of it as a main course at breakfast (and I had increased the number of eggs), so there's no way the original recipe would feed 12. I will definitely make this again but will try increasing the eggs to 12.

I was a little apprehensive about using cottage cheese in this recipe. It turned out delicious though. I served this to guests as a light supper with a salad, and it was very tasty. I did add salt, pepper, and lawry's seasoning salt to the potato mixture. Good recipe, not sure if I would use it for breakfast though.
