1 (1 pound) package bacon, diced
1 sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen Southern-style hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
1 cup chopped green bell pepper, or to taste (optional)
1 (4 ounce) can chopped green chilies, or to taste (optional)
Delicious.. I really liked the tang from the cottage cheese.. was different. I'll make this again
I made this for a ladies brunch and everyone thought it was wonderful. I did not change a thing. I will definitely use this again.

This recipe was delicious. I made it for a family thing hoping to have some leftovers but the family devoured it ALL. I used 8 eggs instead of 6 and added a little extra bacon and used sharp cheddar and pepperjack cheeses. It was so great. Will definitely make again.
Loved it! Made it today and it got rave reviews. I will say that we cooked it for about 10-15 minutes more than stated because it didn't seem to be setting. It was perfect and I will definitely be making this again.
