Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/4 cup milk
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup flaked coconut
  • 1/2 cup chopped walnuts
  • 1/2 cup crushed pineapple

Directions

  1. In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in banana, milk, orange peel and extracts.
  2. Combine flour, baking soda and salt; add to the creamed mixture just until moistened. Fold in the coconut, nuts and pineapple. Transfer to a greased 9-in. x 5-in. x 3-in. loaf pan.
  3. Bake at 350 degrees for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
