Yum! Without additions, a 4, but with them, a 5. I made these into 12 muffins, and I followed other reviewers advice to kick the recipe up a notch. I used 1.5 cups flour, 1/4 cup each white and brown sugar, 1.25 tsps baking powder, 1/2 tsp each baking soda, cinnamon, nutmeg, and salt. 1 egg, 3 bananas, 1/3 cup applesauce, and 1 tsp vanilla. I mixed the dry ingredients in one bowl, wet ingredients (plus sugar) in another bowl and then added the dry to the wet. I stirred gently and stopped as soon as it was mixed. Careful, as over-stirring can ruin the muffins/bread. I cooked the muffins for 17 minutes and in my hot oven they came out perfect. The toothpick test will always let you know. This is a great recipe to build on and next time I'll try adding 1/4 cup chopped nuts. Very delicious and I highly recommend it.

first time ever trying to make banana bread and it turned out great! i followed everybody's suggestions of vanilla and cinnamon, 1 whole egg. i added oatmeal and next time, will only put in 1/4 cup of sugar. i put 1/2 cup in but it was still too sweet for me. i dont even want to try any other banana bread recipe. so moist and delicious!

For an almost no fat banana bread, it was okay. I added toasted walnuts but... I don't know, I guess I missed the fat. My kids and husband didn't like it. I toasted a slice in my toaster oven and it was a little better that way but in the end, I slathered some butter on it.

This was great! I used whole wheat and it worked out fine. I did use an extra 1/2 cup of banana because of the whole wheat. It was a very healthy snack that the kids really enjoyed.

Absolutely delicious!!! I can't believe there is no oil or butter in it! I have no reason to make banana bread with oil in it anymore!! I guess I made a bunch of changes though, like alot of others. Used less sugar, added nutmeg, added salt, used the whole egg, used 3 bananas (didn't measure), used more applesauce, added vanilla and walnuts. Amazing.

I use this recipe almost every week. I've picked up jars of baby food (applesauce, blueberries, pears, peaches, etc) to add to this in place of the applesauce. I've also added a 1/4 cup of flax meal to increase the nutritional benefit for my kiddos.

wow, great recipe.. IMPORTANT, ADD THE DRY INGREDIENTS TO THE WET ONES, I THINK ADDING THE WET INGREDIENTS TO THE DRY ING. WILL GIVE YOU A RUBBERY TEXTURE. THESE WERE PRETTY DENSE, well its banana BREAD and I made them as muffins.. I reduced sugar to 1/2 cup and added 1/3 cup chopped walnuts and used a whole egg (eggs and nuts are not bad for you, saturated fat is). That makes them 2.8 grams fat for each serving. this made 12 muffins great recipe! thanks for sharing!

It was edible, at best. Rubbery, not sweet enough (unless we're supposed to use a sweetened applesauce), absolutely bland, even with addition of 1 tsp of good vanilla extract and some salt, as recommended by others. Sure, if you add nuts, raisins, apples, more applesauce and what's not, it might be better, but then it would be a completely different recipe.

This is pretty good. I followed the recipe with a couple of exceptions recommended by other reviewers. I used a 1/2 cup of sugar plus one tablespoon of splenda for extra sweetness without the calories. I added a teaspoon of vanilla and used apple pie spice instead of cinnamon. It's really very good, crispy outside and moist inside. Not rubbery as others have experienced.

I could definitely tell it was missing the fat and so could my kids...they wouldn't eat it after a sample taste, but I still liked it well enough to bake again for myself. The bread was a little rubbery...even though I made sure not to over stir and use very ripe bananas.

The only change I made was to throw in some walnuts and a small handful of mini chocolate chips. (I love chocolate in banana bread, and you only need a tiny bit to get a big boost of flavor!)I'll try this as muffins next time. Thank you for this nutritious and delicious recipe!

perfect with just 1/2 cup of sugar, upped the cinnamon and used whole eggs rather than just whites (=nothing wasted!!), and also added 2 tbsp of flaxseeds. baked only 20 min in mini muffin pan topping each with a walnut half and they came out great!! yummy low fat treats!!

I thought this was very good the only change I made was adding 1/2 tsp of almond extract. The bread wasn't quite as moist as the recipe I usually make but it was moist enough.

This was very tasty! My fiance and I both loved it and I will definitely be making it again :) I changed the recipe slightly, using 2tsp of ground cinnamon, one egg, 1/2 cup apple sauce, 4 bananas, 1/2 cup raisins, 1/2 cup walnuts, 1tsp of pumpkin spice, 1tsp vanilla, 1/2tsp salt, dash of honey, then I let it cool for about 10mins before serving.

I changed it up a little after reading some reviews. I used 1/3 c apple sauce and only 1/2 c of sugar along with some nutmeg, some almond extract, and some pecans. It came out very good. Not too bad for a lower fat banana bread!

A great way to get a little sweet treat in when you're watching what you're eating. A little rubbery for me but it was a big hit with my husband and the kids. I made them in a muffin pan and it was perfect for serving the kids. I added vanilla and increased the applesauce to 1/3 of a cup. Thanks for sharing.
