I was craving something cheesy/creamy and since starting a gluten-free diet, that limits me a bit, but then I thought "Alfredo!" As I always do, I tweaked the recipe, but used this as my guide. I tripled the garlic, doubled the cheese, doubled the parsley, and doubled the cream...as a runner, this is not something I would normally do, but hey, indulgences are okay on occasion, right? I think the one thing the recipe neglects to say is the let the sauce "rest" for a few minutes of the heat until it thickens. I served with minimally peppered, baked chicken--yumm!!!!
