Cooking this roast long and slow makes for a tasty, tender sandwich. Top the sandwich with some coleslaw for a crunchy, cool contrast. Have your favorite side dishes and some cold watermelon for dessert.

Your guests will love the saucy little sandwiches you create from a pork roast that is seasoned with cayenne, garlic and onions, and then boiled until the meat is falling off the bone. Stir in some barbecue sauce and you have a sensational party dish!

A lot of ethnic recipes use pig tails. They are great as a meat dish with turnip greens, black-eyed peas, or boiled cabbage. My recipe cooks the tails, twice and the result is a crispy crackling covering the tail, that you can eat or save for crackling in cornbread. The crushed red pepper can be used liberally for a spicy taste. Be sure to buy pig tails that have a lot of meat around the upper part.

The pork shoulder roast, sometimes labeled as Boston butt, is a rich and flavorful cut that becomes very tender as it cooks. This pulled pork is slow cooked and then simmered on the stove with salsa and tomatoes. Serve with warm tortillas or hard taco shells.
