This is an unusual, but delicious recipe. I only had 1/2 the chili powder and the burritos still had plenty of flavor. I also used whole wheat tortillas and served these with sour cream and slasa. I'll definately make these again!

absolutely delicious! For the Sweet potatoes bc baking is time consuming and can be messy I would recommend boiling. (when cut into chunks it only takes about 15 min to cook!) Used black beans and just mashed them right with the sweet potatoes

These are a big hit with both the sweet potato hater and the spicy food hater in our house! Just the right combination of flavors to please everyone. I would cut the recipe in half if you don't want left-overs, because this makes plenty!

Spectacular! Although I do admit to changing the recipe a little to suit what I had on hand. I used curry powder instead of cumin, and used one 19oz can of kidney beans and one 19 oz can of black beans. The sweet potato was huge, so I might have used more than the 4 cups. I also liked the idea of corn as used in one of the reviews, so added some of that. Mashed the sweet potatos in a pot, added the beans. Fried the onions, garlic & spices in another pan, then added the bean/potato mixture to the pan to combine. Great stuff - I'm looking forward to freezing the leftovers and having them for lunch. I'll make this again with different variations and will try to follow the actual recipe as well, just to compare.

I expected these to taste a lot more unusual. They were delicious just as the recipe is written. Next time, I'll probably use canned refried beans to speed things up on a weeknight. The seasonings were just right; I'll make this again and not change a thing!

Brilliant recipe! A few things that I do differently - I use more kidney beans than recommended and I usually add avocado into the burritos before I put them in the oven. Yumm!

I have been meaning to try this recipe forever - and now I wish I would have tried it sooner! These are crazy good. I made a bunch and stuck them in the freezer so they will be available whenever I want them! :)

We really liked these. Was curious about the soy sauce and mustard, but they did add another layer of flavor. Halved the recipe, except for using 2 cans of black beans. When making the burritos used twice as much of the bean mixture as sweet potato & sprayed them with cooking spray before baking as another reviewer suggested. They were not bland at all and the right proportion of beans and potato. Our version made 7 medium sized burritos.

I made this last night for dinner and it was great. The only change I made was I omitted soy sauce, I didn't have it on hand. My boyfriend is a huge meat eater but he ate this last night and Loved it! He brought the leftovers to work today. I am definitly making this again : )

Super yummy, very filling. They are even better leftover and reheated in a toaster oven, and so they make a great lunch for at work. I think I might try black beans next time since I prefer the flavor of them.

These are wonderful. My kids eat them, the adults love them, and they are healthy. We make them often. I make changes all the time to adjust to our tastes and what we have on hand and they always turn out. I am so thankful for this recipe- It brought new flavor that everyone loves.

My new favorite recipe! I made only 6 servings, and still had a lot of filling leftover. I'll use the leftover filling to make quesadillas or empanadas later this week. Next time I make this, I'll add cilantro too.

These are truly addictive! I follow the recipe except I leave out the chili powder (I don't like chili powder). The first time I made this, I wasn't too sure about the first few bites. But it grew on me and the next day, I was craving them again. Thank goodness for leftovers. My picky 5 and 8 yr olds like it too. Some reviewers said the baking doesn't matter but I say it's essential! Gives all the mushy potatoes and beans a little crunch. I tried them once without baking (when I was in a hurry) and I'll never do that again...they still had great flavor but they do need that crunch! Great recipe!!

My husband and I both liked this. I think that next time I might mix the potatoes with the bean mixture, that way you don't just get a mouthful of potatoes when you bite into it. I halved everything to make six burritos instead of twelve, but could have used a little more spice. But yummy overall, will make again!
